Dry aging at home: what you actually need
Dry aging beef at home needs three things held steady for three to six weeks: a temperature of about 1–3 °C / 34–38 °F, relative humidity around 75–85 % and constant air movement. There are three ways to get them: moisture-permeable membrane bags in an ordinary fridge, a dedicated fridge fitted with a fan and a rack, or a purpose-built aging cabinet.

Every route, the same environment
Why beef changes when it is aged in cold moving air is covered in the article on dry aging. This page deals only with the equipment: what has to be controlled, the three routes open to a home cook, what each costs and what each can and cannot do.
Every route has to deliver the same environment. The European Food Safety Authority (EFSA), reviewing commercial practice in 2023, found dry-aged beef usually held at 1–4 °C and 75–85 % relative humidity for 21–35 days, with continuous airflow over the surface. The equipment question is simply which of these variables the cook controls, and which are left to chance.
The conditions to hold
| Variable | Target | Why | How it is checked |
|---|---|---|---|
| Temperature | 1–3 °C 34–38 °F, stable | Slows spoilage bacteria while enzymes keep working; EFSA's safety comparison used 3 °C 37 °F | Probe or appliance thermometer on the shelf, not the fridge dial |
| Relative humidity | about 75–85 % | Too dry: a thick, wasteful crust. Too wet: slime and off-odours | Digital hygrometer; not needed with membrane bags |
| Airflow | continuous, over every face | Keeps the surface dry so moulds and yeasts, not putrefactive bacteria, dominate | A small fan; the piece on a rack, never on a plate |
| Time | 21–45 days | Most tenderising is done by 21–28 days; flavour keeps developing | Label with the start date; weigh in and out |
The three routes
Membrane bags. Products such as UMAi Dry are made of a film that lets water vapour out while keeping odours and contaminants away from the meat. The piece is sealed in the bag and placed on a rack in a refrigerator; the bag replaces humidity control and protects other food. In a 2014 study in Meat Science (Li and colleagues), beef aged in such bags showed lower weight loss and less microbial growth than traditionally dry-aged beef, and consumers preferred it to vacuum-aged beef. The bag still needs a cold, stable fridge with space around it.
A dedicated fridge. A second refrigerator, used only for aging, fitted with a wire rack, a small clip-on fan inside, and a thermometer-hygrometer that can be read without opening the door. A plug-in external thermostat can help hold a narrow temperature band. Humidity is the hard variable: a domestic fridge dehumidifies as it cools, so the cook can only observe it, not set it.
A purpose-built cabinet. Aging cabinets sold for homes combine a compressor, fans, humidity control and, on most models, an ultraviolet-C lamp to treat circulating air, behind a glass door. They are the only route where temperature, humidity and airflow are all set rather than hoped for, and the only one that suits repeated use.
Equipment compared
| Product / route | Type | Capacity | Controls (temp / humidity / UV) | Price band (approx., Oct 2026) | Notes |
|---|---|---|---|---|---|
| UMAi Dry, Ribeye/Striploin bags | Membrane bag | One subprimal per bag | None of its own; relies on the fridge | US$29 per kit (maker) | Sold for 4–6 weeks of aging in a refrigerator |
| Dedicated fridge + fan + rack | Converted fridge | Depends on fridge | Temperature via thermostat; humidity monitored only; no UV | — | Must not be shared with other food |
| DRY AGER DX 500 Premium S | Aging cabinet | Up to 20 kg / 44 lb | Temperature; electronic humidity control; UV-C | about €2,100–2,550 (EU retailer, ex./incl. VAT) | No water connection; larger DX 1000 rated about 100 kg |
| Klarstein Steakhouse Pro 98 | Aging cabinet | 98 L | 1–25 °C; 60–85 % humidity; UV-C | — | Specifications from retail listing |
| Steak Locker Home Edition G5 | Aging cabinet | 65 lb / about 29 kg | 34–72 °F (1–22 °C); active humidity control; germicidal UV | US$2,499 (maker) | App monitoring and control over Wi-Fi |
A whole subprimal, not steaks
Whatever the equipment, the meat should be a whole subprimal, not cut steaks: a bone-in rib section (the source of the ribeye), a whole striploin or a short loin for T-bone. Bone and an intact fat cover shield the muscle, so the larger and better covered the piece, the smaller the share lost. Over the usual aging periods evaporation and trimming together remove roughly 15–30 % of the starting weight; well-marbled beef from a higher grade tolerates the drying better than lean beef.
Weighing the piece on entry and at the end shows what the setup is actually doing: a loss far above the expected range points to too much airflow or too little humidity, a very low one to too little drying.
Well below the 4–5 °C fridge limit
Official guidance on home refrigeration sets the outer limit. The USDA Food Safety and Inspection Service (FSIS) advises keeping refrigerators at or below 40 °F / 4 °C and checking with an appliance thermometer; the UK Food Standards Agency advises 5 °C / 41 °F or below. Dry aging needs a fridge well under both, held steady for weeks.
EFSA's 2023 opinion concluded that dry aging beef for up to 35 days at a surface temperature of 3 °C / 37 °F or below does not raise the risk from Listeria above that of fresh beef, provided time and temperature are controlled. Australian regulators treat commercial dry aging as a controlled process: in Victoria, businesses must meet the national meat standard and have premises and equipment approved. None of these bodies publishes a home protocol; the commercial conditions are the reference. Slime, a sour or ammonia smell and wet patches are reasons to discard the piece.
No single steaks, no shared fridge
Age single steaks: after trimming the crust, little remains. Leave beef uncovered in a shared household fridge with no fan: the door opens constantly, humidity and airflow are uncontrolled, and other food picks up odours. Rely on the fridge's own dial instead of a thermometer on the shelf. Stack pieces or rest them on a plate where juices pool.
Salt blocks, often sold as a way to control humidity or bacteria in home setups, are not among the controlling factors identified in the scientific reviews of dry aging, which name temperature, humidity and airflow. Salting the finished steak before cooking is a separate matter, covered under salting steak.
From US$29 bags to US$2,000 cabinets
Membrane bags are the cheapest entry: the maker lists its ribeye/striploin kit at US$29 (October 2026), and they use a fridge the cook already has. A converted second fridge costs the price of the fridge plus a fan, rack and thermometer-hygrometer, and its running cost. Home aging cabinets sit around US$2,000–2,500 or the euro equivalent, before shipping. In every case the largest cost is the meat itself, and the 15–30 % of it that does not reach the plate. Prices change frequently; the figures here are approximate and dated.
Frequently asked questions
Can you dry age steak in a regular fridge?
Only with membrane aging bags, and only if the fridge holds about 1–3 °C / 34–38 °F with space around the piece. Leaving beef uncovered in a shared household fridge is not a controlled method.
Do UMAi bags really dry age beef?
They allow moisture to escape while protecting the surface. A 2014 study found bag-aged beef lost less weight than traditionally dry-aged beef and was preferred to vacuum-aged beef by consumers.
What temperature and humidity does a dry aging fridge need?
About 1–3 °C / 34–38 °F and roughly 75–85 % relative humidity, with continuous airflow over every surface.
Can you dry age a single steak?
It is not recommended: the dried crust has to be trimmed, and a single steak loses too large a share of its weight. Whole bone-in subprimals are used.
How long should beef be dry aged at home?
Typically 21–45 days. EFSA's safety assessment covered up to 35 days at 3 °C / 37 °F or below.
