The beef in Melbourne

What the menus here are built on, counted from the 21 steakhouses below

Melbourne is Australia's largest city, and its steak restaurants run from a Richmond charcoal grill that has served the same set menu since 1964 to a Wagyu-only dining room in South Yarra, Argentine parrillas in the CBD and pubs where diners choose their cut from a cabinet. Six of them were in the World's 101 Best Steak Restaurants 2026.

Steak in Melbourne: the long read

Victoria had 2.6 million beef cattle in June 2025, about a tenth of Australia's 27.6 million, according to the Australian Bureau of Statistics; the herd is small next to Queensland's 13.5 million, but Melbourne menus lean on it. O'Connor, a Gippsland family business that raises Angus and Hereford cattle on clover and ryegrass pasture, is named more often than any other producer: it supplies all the beef at San Telmo and is listed at Gimlet, Palermo, Asado, Meatmaiden, Reine & La Rue, Angus & Bon and the Middle Park Hotel. Grass-fed beef from Bass Strait and Cape Grim in Tasmania follows. Grain-fed beef comes mostly from interstate feedlots such as Rangers Valley in New South Wales, while Victoria's part in Wagyu is older than most: David Blackmore formed Blackmore Wagyu in 1990 as one of the first importers of Wagyu genetics into Australia, and the Sher family has produced Wagyu since 1991, grass-fed and then grain-fed for more than 400 days. Blackmore is on the menu at Rockpool Bar & Grill, Gimlet and Reine & La Rue; Sher at Meatmaiden and Asado.

The oldest steakhouse still trading is Vlado's, opened on Bridge Road, Richmond, in 1964 by Vlado Gregurek, who had arrived from Croatia five years earlier; it still serves one set menu from a charcoal grill, and his son Michael has run it since Vlado's death in 2012. The Middle Park Hotel has been licensed since 1889, and the Railway Club Hotel in Port Melbourne has had one of the city's busiest dining rooms for four decades, with a meat cabinet from which diners choose their cut. France-Soir, a Parisian-style brasserie on Toorak Road, opened in 1986. The modern steakhouse arrived with Rockpool Bar & Grill at Crown in 2006, Gourmet Traveller's New Restaurant of the Year 2008, and with San Telmo in 2011, which brought a Pirincho parrilla from Argentina to Meyers Place.

Most of the newer rooms are in the CBD laneways (Flinders Lane, Russell Street, Collins Street, Duckboard Place) and in South Yarra, Prahran and Armadale. Six Melbourne restaurants were in the World's 101 Best Steak Restaurants 2026: Steer Dining Room (No. 29), Victor Churchill (31), Gimlet (62), Matilda (79), Meatmaiden (81) and Grill Americano (95); Entrecôte and Blackbird were also in the guide's Australian top 30. Fire is the common thread: ironbark at Rockpool, Reine & La Rue, Angus & Bon and Blackbird; Josper charcoal ovens at Grill Americano and Cinder; coals at Victor Churchill and Gimlet; mallee-root charcoal and an asado pit at Palermo.

Three names from recent lists have closed: Botswana Butchery on Flinders Lane (May 2024), Adrian Richardson's La Luna Bistro in Carlton North (August 2024, after 26 years) and Scott Pickett's Matilda 159 Domain in South Yarra (August 2026; the site is now Kiki's Tavern). Also in the city: weekly steak nights at pubs and wine bars such as the Marquis of Lorne in Fitzroy and Lilac in Cremorne, Wagyu over charcoal at the Korean barbecue Mansae, and Steak Ministry in Glen Waverley.

Others run weekly steak nights, such as the Marquis of Lorne in Fitzroy on Tuesdays.
