Steakhouses in Shanghai

Shanghai's steakhouses range from American-style chophouses in hotels and skyscrapers on both banks of the Huangpu to Brazilian churrascarias, Argentine-style grills and yakiniku rooms, almost all built around imported beef from Australia, the United States and South America.

Western food has been part of Shanghai's dining since the treaty-port era, when the cooking of the city's foreign residents was adapted by local kitchens into haipai xican, Shanghai-style Western food. Deda, which traces its origins to a meat shop opened in Hongkou in 1897, is one of the few restaurants that still serve the style.

Today's steakhouses cluster in three areas. Along the Bund and across the river in Lujiazui, Pudong, they sit in hotels and towers with river views. Jing'an, around West Nanjing Road, has hotel chophouses next to independent grills and bistros. Xuhui, in the former French Concession, has smaller independent steakhouses. The formats include American chophouses and the international chains, Brazilian churrascarias such as the Latina group (in Shanghai since 1998), Argentine and Uruguayan-style grills, and Japanese and Taiwanese yakiniku.

The beef on most menus is imported. Australian grain-fed Angus and Wagyu (Rangers Valley, Stanbroke, Mayura Station) is the most common; American beef returned to China in June 2017 after a 14-year ban, and several steakhouses opened around that date; Uruguayan and Argentine beef is used in the South American-style restaurants; and Chinese Wagyu, such as Xuelong from Dalian, has begun to appear on hotel menus. In-house dry aging is common at the top end, with stated periods from 25 days to 180 days.
