Why go

Wagyu, and only Wagyu. Steer's steak list runs past 30 cuts, in two sections, classic grain-fed and dry-aged, from Australian fullblood (Mayura Station, Stone Axe, Sher, Rangers Valley, 2GR, Black Opal) to Japanese A5 from Kobe, Kumamoto, Kagoshima and Ozaki. Kobe beef from Hyogo Prefecture went on in April 2024, and Broadsheet counts Steer among a handful of Australian restaurants to serve it, across three courses. A roving steak trolley, a Signature Wagyu Degustation and tableside rituals set the format, which the house calls a modern expression of the steak restaurant and the guides call New York-style, with Japanese and Australian touches. The World's 101 Best Steak Restaurants put it at No. 29 in 2026, up from 37 in 2025, and Sitchu reports No. 6 in the list's Australian top 30. Head chef Jeffry Lim, the 'Meat Master' of the 101 Best listing, leads the kitchen.

Japanese A5 from Kobe (Hyogo), Kumamoto, Kagoshima and Ozaki. The beef is wet- and dry-aged in house, per the 101 Best listing; dry-ageing from 40 to 110 days, per Man of Many. Marble scores are not printed in any source Steakpedia read, and neither are weights or prices per cut. The number: 110 days.

03The fire

A high-temperature broiler and a hibachi grill, per the World's 101 Best Steak Restaurants listing for 2026. No source names the fuel of the hibachi, and the house's own pages do not mention the grill.

04The story

The name is older than the room. Steer Bar & Grill traded at 637 Chapel Street, inside the Olsen Hotel, when Dani Valent reviewed it for The Age in June 2012, with chef Shaun Neilsen and a board of raw Wagyu and Angus explained at the table before cooking; Concrete Playground's 2023 review says the team's relationships with its suppliers date to 2009. Today's Steer Dining Room is on Claremont Street, a few blocks away, with a six-seat red velvet booth for drinks and a dark-curtained dining room. When it moved, and whether the ownership is unchanged, is not stated in any source Steakpedia found; Man of Many reports a refurbishment in late 2025. In the World's 101 Best it rose from 37 in 2025 to 29 in 2026.
