Why go
Coals. Dry-aged steaks go over coals at the back of a butcher shop, in the old State Savings Bank on High Street. Victor Churchill opened its Melbourne branch in November 2021: three circular timber blocks behind a three-metre curved glass screen, a charcuterie counter between two unrestored Berkel slicers, a dry-ageing room walled floor to ceiling in Himalayan salt bricks, and a horseshoe bar of 13 seats. The bar menu runs on a Josper charcoal rotisserie, a charcoal oven and a Basque grill. The World's 101 Best Steak Restaurants listed it at No. 18 in 2025 and No. 31 in 2026, eighth among the Australians. A Crown Melbourne bar and grill is due in mid-2027.

04The story
Victor Churchill was founded in Woollahra, Sydney, in 1876, Australia's oldest continually run butcher per Wikipedia. Anthony Puharich and his father Victor, fourth-generation butchers who had started their own business in Darlinghurst in 1996, reopened it in 2009 with a A$2.5 million fit-out; Anthony Bourdain visited in 2012 and called it the most beautiful butcher shop in the world, and a New York branch planned with him was dropped after his death in 2018. Melbourne followed in November 2021, the brand's first store outside Sydney, in a former bank at 953 High Street; the bar had 12 seats at opening, per Gourmet Traveller and Concrete Playground, and 13 by the house's current count. The first birthday was marked from 7 to Nov. 13, 2022. In January 2026 Crown Melbourne announced a Victor Churchill bar and grill at 8 Whiteman Street for mid-2027, with chef Monty Koludrovic.
