Why go
Charcoal. Nothing else. San Telmo Brisbane cooks on a custom parrilla modeled on the Argentine-built grill of the original San Telmo in Melbourne. Broadsheet reported that the kitchen burns charcoal only, not wood. The fire is lit each morning. The grill sits in an open kitchen, in view of every seat in a 100-seat room, with up to 12 seats at the pass. The house opened on June 29, 2026. The menu reads like a Buenos Aires parrilla: tira de asado, entraña, cuadril, ojo de bife, morcilla, provoleta.
What to order
- Ojo de bife (rib eye), 500 g / 18 oz
- Solomillo, 500 g / 18 oz
- Tira de asado, 350 g / 12 oz
Not published: breed, price.
01What to order
- Ojo de bife (rib eye), 500 g / 18 ozO'Connor's pasture-fed beef; A$140 on the October 2026 online menu. The biggest steak on the list. Built for two.
- Solomillo, 500 g / 18 ozDry-aged Stockyard striploin, A$120. The menu uses the name for the striploin, not the tenderloin.
- Tira de asado, 350 g / 12 ozShort rib cut across the bone, O'Connor's pasture-fed; A$54.
- Cuadril (rump cap), 350 g / 12 ozBlack Opal F1, MBS 6–7; A$70. Also the steak in the A$105 El Caminito set menu.
- Entraña, 250 g / 9 ozListed as hanger steak, O'Connor's pasture-fed; A$62.
- Provoleta and morcillaFried provolone with red chimichurri, A$22; blood sausage, A$17. Start here.
02The beef
Two suppliers carry the steak list. O'Connor's, pasture-fed: the ojo de bife, the tira de asado and the entraña. Stockyard: the 250 g / 9 oz bife de lomo at MBS 4–5, A$95, and the dry-aged solomillo. Black Opal F1 at MBS 6–7 covers the cuadril and the falda. The opening release lists a dry-age chamber; no source gives the number of days. Lamb is a Margra rump; pork, a 500 g / 18 oz Black Berkshire chop.
03The fire
Charcoal only, on a parrilla built for the room. It copies the Melbourne grill, which Broadsheet said in 2011 was made by the Argentine builder Pirincho. Almost everything goes over the coals: cuts, seafood, vegetables, the chapa flatbread. Chimichurri comes free and is refilled on request. Order the tira first.
04The story
San Telmo opened on Oct. 21, 2011, on Meyers Place, Melbourne, from brothers Dave and Mickey Parker with Jason and Renee McConnell. The Brisbane website links to sister venues Asado, Palermo, Pastuso and Robata. Brisbane is the group's first interstate venue. Head chef Mikey Dalton worked at San Telmo and Palermo; director Ben Robinson runs the floor and the drinks. Both moved north about three years before opening. Interior architect Kate Archibald used a checkerboard floor and pendants made from vintage Argentine soda siphons.
