Why go
Grain-fed Australian cattle, and only grain-fed: Walter's builds its menu on one kind of animal and one house steak. The Signature Porterhouse is listed as prime Australian grain-fed beef, dry-aged and cut in house, and the restaurant says the animal behind it spent 270 days on grain. Every steak, by the same account, hangs for at least four weeks before it is cut. Three friends who had lived in New York, Denis Sheahan, Paul Piticco and Andrew Baturo, opened it in March 2018 to bring a New York steakhouse to Brisbane, using Australian beef.

02The beef
Breed and producer are not on the current menu or website. In 2018, Indulge described the house porterhouse as grain-fed, dry-aged Angus. Today the website says the kitchen buys grain-fed beef only, that the porterhouse comes from cattle fed on grain for 270 days, and that every steak is dry-aged in house for a minimum of four weeks, which is 28 days. Broadsheet reported at opening that all meat is cut and aged on the premises, and that the first kitchen chose its beef by tasting rather than by origin. Grade, marble score and exact aging days for each cut are not stated.
03The fire
No source describes the grill or the fuel used at Walter's.
04The story
The restaurant opened in March 2018 in the space that had held Restaurant Two, run by DAP & Co, the group behind The Gresham. It is named after Sir Walter Hill, first superintendent of the City Botanic Gardens across the street, whose portrait hangs above the bar. The building, Old Mineral House, was built in 1888 as a warehouse for the merchants Smellie & Co, to a design by Richard Gailey. It gained two floors in the late 1890s and has been on the Queensland Heritage Register since 1992. Anna Spiro designed the interior; only the original timber floor was kept.
05The practical
