Why go
Grass-fed rib eye, dry-aged for six weeks and cut at 800 g / 28 oz, sits at the top of Rothwell's grill list. Below it come a grain-fed fillet at M4+, a 400 g / 14 oz grass-fed rib eye and three Wagyu cuts, from a fullblood pavé at 6+ to a sirloin at 7+. The list is short, and the dining room around it carries as much weight: owner Dan Clark of 1889 Enoteca modeled it on London's Savoy Grill and The Wolseley and on Musso & Frank in Los Angeles, per Concrete Playground. It sits in the Rothwells Building on Edward Street, erected in 1885 and on the Queensland Heritage Register since 1992. The house calls its beef Wellington, a 600 g / 21 oz piece to share, its signature dish.

02The beef
The October 2026 menu gives feeding and marble score but not the farm, the region or any breed beyond Wagyu. The fillet is grain-fed at M4+ and both rib eyes are grass-fed. The Wagyu pavé is fullblood at 6+, the tri tip 6+ and the sirloin 7+. Only the 800 g / 28 oz rib eye is marked as dry-aged. Every grill steak comes with onion rings, celeriac remoulade and a choice of mustards, horseradish or béarnaise. When the restaurant opened in 2021, Style Magazines described a menu built on Australian beef, local seafood and handmade pasta.
03The fire
The menu has a section called Grill, but no source describes the grill or the fuel it burns.
04The story
The Rothwells Building was erected in 1885, beside the Rowes Building, for the merchant John Forsyth. The drapery and tailoring firm Rothwells, founded in 1897, leased it from 1904 and bought it in 1909, and its name is still on the pediment. The building entered the Queensland Heritage Register on Oct. 21, 1992. Dan Clark, who also runs 1889 Enoteca and Addley Clark Fine Wines, opened Rothwell's Bar & Grill there in late 2021, in the space Jamie's Italian had occupied; Style Magazines announced it on Nov. 24, 2021, and Concrete Playground reviewed it on Dec. 1. Chef Ben Russell, formerly of Aria and Est Est Est, led the kitchen.
