02The beef
Navala opened with JBS Australia as its supplier, per Queensland Country Life in June 2014: 18 products, including Friboi beef, 70 days on grain and MSA-graded, from the Dinmore plant near Ipswich, plus Great Southern lamb. No current source names the producer. The menu today lists five beef cuts on the rodízio, then lamb leg, linguiça, pork neck, pork leg, four chicken cuts, coconut fish and calamari.
03The fire
Pits of wood and charcoal. In 2014 Food Wine Travel described the meats slow-cooked on giant skewers over them, then sliced at the table. Must Do Brisbane adds a ground pit of charcoal and wood that turns out three or four cuts a day, chosen from aged rib or sirloin on the bone, whole brisket, lamb leg, short ribs, suckling pig, pork belly or pork leg on the bone. The menu splits each skewer: outside cut for medium-well, inside cut for rarer.
04The story
Navala opened in June 2014 at Riverside Quarter, on the Eagle Street riverfront. It was a joint venture of chef David Kim and Daniel Fujimoto, who had worked in churrascarias in Sydney, per Food Wine Travel. The opening menu counted at least 22 meats, at A$53 for all you can eat. JBS Australia supplied the beef and lamb at launch.
