Why go
Le Bœuf Volant reads like a stock list. Its menu names each animal's farm or breeder, what it ate, its age at slaughter and the days of dry-aging: US Black Angus heifers fed on corn and aged 45 days, Westholme wagyu from Australia aged 30 days, David Blackmore's purebred wagyu fed on grain for 600 days, A5 wagyu from Kagoshima. The house is a small, evening-only steakhouse in Batignolles with an open kitchen, run by the chef Jonathan Capitaine. It was No. 79 in World's 101 Best Steak Restaurants 2024 and No. 44 in Europe's 50 Best Steak Restaurants 2026.

02The beef
The animal comes first on this menu, and most of it is written down. From the United States: Black Angus graded Prime for the set-menu cuts, and Black Angus heifers fed on corn, from a farm the menu spells 'Creekston farm', for the côte. From Australia: Westholme wagyu at marble score 6–7+, grass-fed then grain-finished and slaughtered at 32 months, and David Blackmore's purebred wagyu at 9+, grain-fed for 600 days and slaughtered at 30 months. From Japan: Kagoshima wagyu graded A5. The menu gives the general origins as the EU, the US and New South Wales. Time Out also named Simmental from Bavaria in 2019 and in 2026; the 2025 menu does not list it. The menu online dates from February 2025, so ask what is on the board. The number: 600 days.
03The fire
The menu says the wagyu is cooked on the plancha, and a recipe the chef gave Le Fooding sears a 1 kg / 2.2 lb Australian tomahawk on a very hot plancha before slicing it onto a wooden board. No source mentions charcoal or wood.
04The story
In February 2019 Time Out reviewed a modern, intimate room in the New York style (vintage tableware, Eames chairs, horns over the door) with a €35 set menu and a wagyu chuck flap at €15 extra; the beef then came from the United States, Bavaria, Australia and Spain. In May 2024 Time Out reported the house at No. 79 in World's 101 Best Steak Restaurants, calling it Jonathan Capitaine's modest Bœuf Volant, on the same list as Anahi and Clover Grill. In September 2026 it ranked No. 44 in Europe's 50 Best Steak Restaurants. No source read by Steakpedia gives the year it opened.
