Why go

Le Bon Georges names one producer for its beef: Alexandre Polmard, of Saint-Mihiel in the Meuse, a friend of the owner, Benoît Duval-Arnould, a former agricultural engineer. The cuts are aged: in October 2026 The Infatuation described dry-aged slabs priced for groups and a tenderloin au poivre at €74. The rest of the meal is a seasonal bistro menu written on a slate by the chef, Loïc Lobet, and a wine list that Wine Spectator counts at 2,000 selections and 67,000 bottles. Wine Spectator has given it its Grand Award since 2025. The house is open every day, for lunch and dinner.

02The beef

Polmard, a producer in Saint-Mihiel in the Meuse, is the only beef source the house names. In March 2015 Didier Chambeau, writing on Gilles Pudlowski's blog, gave the detail: Blonde d'Aquitaine, bought on the hoof and aged 8 to 12 weeks, served as rib, rumsteck and plat de côte. Later sources say less. Pudlowski in 2022 listed carpaccio, tartare, a large côte and filet; in 2024 he wrote of 'belles pièces maturées'; Gault&Millau 2026 mentions aged meats, with Polmard beef 'en complément'. No 2026 source repeats the breed or the number of days, and none gives the price per kilo. The number: 8 to 12 weeks, as of 2015.

03The fire

No source describes how the beef is cooked or on what.

04The story

The bistro took the corner of rue Saint-Georges and rue d'Aumale, where the Dell'Orto trattoria used to be. 50 Best Discovery dates the opening to 2014; other listings say 2013 or 2015. In 2015 Pudlowski's blog recorded a €19 lunch menu, à la carte at €43 to €55 and more than 220 wines; by December 2024 à la carte ran from €65 to €105. The cellar grew faster still: Wine Spectator gave Le Bon Georges its Grand Award in 2025, with Frédéric Sénéchal as wine director and strengths in Burgundy, the Loire, the Rhône, Bordeaux and Champagne, and 50 Best Discovery counts eight sommeliers.
