Why go

For the weekday lunch, or the dinner where the whole table wants one French classic done with care, La Bourse et la Vie is built around steak au poivre. The American chef Daniel Rose opened it in 2015, with 29 seats between the Bourse and the Palais-Royal, after Spring in Paris and before Le Coucou in New York; by December 2015 Time Out was already calling the steak au poivre the house's cult dish. The room is small, with large antique mirrors and green-gray velvet, according to Le Fooding, and it opens only from Monday to Friday, so this is an address for the working week rather than the weekend. Gault&Millau gave it 13/20 in its 2026 guide.

01What to order

02The beef

The menu gives two facts about the beef: both cuts are of French origin, and the faux-filet is "maturé," aged. It does not name the breed, the farm or the number of days, and no other source read by Steakpedia does. The pepper is the heart of the dish: green peppercorns left whole with coarse black pepper, per The Infatuation; in 2015 Time Out described the sauce deglazed with Armagnac and served with a salad dressed with anchovy vinaigrette.

03The fire

No source describes the stove or the grill, or says whether the steak is pan-fried or grilled.

04The story

Daniel Rose, from Wilmette, Illinois, opened Spring in the 9th arrondissement in 2006 with 16 seats, took over the old bistro Chez La Vieille in 2016 and opened Le Coucou in New York the same year; Le Coucou received a James Beard Foundation award in 2017. La Bourse et la Vie arrived in 2015 as a classic bistro: Patricia Wells, in October 2015, wrote of a long, narrow room with close-set tables and giant gougères brought to the table. In April and May 2022 it briefly became Le Borscht et La Vie, with a Ukrainian menu cooked by three refugees and part of the takings given to charity.

05The practical

12 rue Vivienne, 75002 (metro Bourse). Open Monday to Friday: lunch from 12:00 to 14:00, dinner from 19:00; Le Fooding gives 21:30 as the last hour and Gault&Millau 23:30, so ask when you book. Closed on Saturday and Sunday. Bookings online through the restaurant's site (Zenchef) or on +33 1 42 60 08 83. At lunch the site lists daily dishes from €24; at dinner, mains à la carte start at €36. With 29 seats, booking ahead is the safe course.
