Why go
In 1964, according to Time Out, Georges Constant opened a bistro at 1 rue du Mail, a few steps from the Place des Victoires; six decades later the red banquettes, white tablecloths and patinated mirrors are still in place, and the menu is still written by hand. The beef on it is the classic Paris bistro pair: an entrecôte (rib-eye steak) grilled and topped with bone marrow, and the pavé du Mail, a thick house steak named after the street. Gilles Pudlowski wrote in March 2026 that the house once held a Michelin star; Gault&Millau gives it 11/20 in its 2026 guide. It opens on weekdays only.
What to order

01What to order
- Entrecôte grillée à la moelle (grilled rib-eye with bone marrow)€33 on a menu extract published by Paris Gourmand (undated); Time Out named it again in its June 2026 list for meat lovers.
- Pavé du MailThe house pavé de bœuf (thick-cut steak), with cream and pepper and homemade chips per Lesrestos (2023); with chips and green beans per Time Out (2024).
- Onglet à l'échalote (hanger steak with shallots)On the menu Pudlowski read in March 2026.
- Filet de bœuf béarnaise (beef filet with béarnaise)Named in the Gault&Millau 2026 review.
- Foie de veau à l'anglaiseCalf's liver, €28 on the Paris Gourmand extract; for the guest who skips the steak.
02The beef
The menu names cuts, not animals. The record holds the grilled entrecôte with marrow, the pavé du Mail, an onglet with shallots and a filet with béarnaise, beside offal such as calf's liver, veal kidneys Henri IV and sweetbreads with morels. No source gives the breed, the origin, the grade or any aging of the beef, and Steakpedia does not guess them.
03The fire
The menu says grillée, grilled, for the entrecôte. No source describes the grill, the heat source or the kitchen equipment.
04The story
Time Out dates the house to 1964 and names Georges Constant as its founder. Paris Gourmand tells it differently: the present owner succeeded the Brouillet family, who ran it for three generations, in a dining room in the style of 1900. Lesrestos fixes the hand-over: Arnaud Brouillet sold Chez Georges in June 2010 to Dominique Paul and Jean-Gabriel de Bueil, who already ran Le Bistrot de Paris and Chez René. De Bueil still leads it, per Time Out in 2024 and Pudlowski in 2026. Patricia Wells's blog noted in 2015 that wine was still sold "by the meter," paying only for what is drunk from the bottle. A large fresco recalls the old game of mail. Steakpedia uses 1964 and notes the Brouillet account.
