Why go

Three Cuts names the animal on every steak. Its September 2026 menu gives breed, country and marble score for each one: Australian Black Angus for the striploin and tenderloin, South African wagyu for the ribeye. The founders, Joe and Jason Bassili, father and son, sampled almost 40 cuts before settling on those three, as Jason told Design Middle East in 2024. Around them sit three large pieces for sharing, from three more origins: a US Black Angus T-bone, an Australian wagyu tomahawk and a Japanese A5 ribeye. The house opened in 2024 on the Rooftop West of Nakheel Mall, which the restaurant's website now calls Palm Jumeirah Mall, and Time Out Dubai kept it in its 2026 steakhouse guide.

01What to order

02The beef

Four origins on one page. Australia supplies the Black Angus striploin (MB2+) and tenderloin (MB4+) and the wagyu tomahawk (MB9+); South Africa the wagyu ribeye (MB8–9); the United States the Black Angus T-bone (MB3+); Japan an A5 wagyu ribeye of 1 kg / 2.2 lb, served on a block of Himalayan salt for AED 2,000. The website lists dry-aged meat, naming the T-bone and the burger; the cheeseburger uses a USDA Black Angus patty, AED 135, or AED 160 dry-aged. No source gives the aging days or the cattle's feed. The number: 40 cuts tasted to choose three.

03The fire

FACT's June 2024 review describes a three-meter grill fired with oak, olive wood and compressed charcoal, or a blend of the three, with the kitchen framed in a gilded picture frame. FACT's opening notice in February 2024 already spoke of an oak wood fire.

04The story

FACT announced Three Cuts in February 2024 as a homegrown steakhouse by Joe and Jason Bassili; What's On, in August 2024, placed it among the first venues on Rooftop West and noted that Jason Bassili was also behind Soul Kitchen in Business Bay. The family's Le Fumoir smokehouse supplies the smoked salmon. What's On's opening review listed the tenderloin at AED 250 and the ribeye at AED 325.
