Why go

Seafire starts from the animal. Its signature is Imperial Blossom, a wagyu from southeast Queensland sold only here, grain-fed for 350 to 400 days per Forbes Travel Guide. Around it sit USDA Prime Black Angus, Australian wagyu from Mayura Station and Japanese wagyu: A5 from Hyogo (Kobe) and Saroma from Hokkaido. The steaks go through the house's dry-aging program, and you choose cut, age and marble score, then a knife from eight styles. Time Out Dubai named it the winner in the steakhouse category of its Restaurant Awards 2026, after a refresh of the dining room, the bar and the menu.

02The beef

Breed, feed and age are what Seafire sells. Khamsa wrote in September 2025 that the cuts spend 45 days in controlled aging chambers; Atlantis describes a three-stage dry-aging program. In 2012 the resort's culinary chief told The National that all Atlantis-branded beef was wagyu, raised about 300 days on an Australian property on hay, wheat and grass, then 250 to 300 days in a feedlot on a 12-ingredient ration that included sorghum, corn, wheat, cottonseed hulls, brewery grain and molasses. In 2022 Khaleej Times listed Black Onyx, a 100% Black Angus grain-fed for at least 270 days. No current menu with prices was available online on Oct. 29, 2026. The number: 45 days.

03The fire

The sources describe two different machines. Forbes Travel Guide, in an undated inspection note, writes of a custom wood-burning grill in the open kitchen; in 2022 Pro Chef Middle East reported new broilers imported from the United States for chef Steven Fair's menu. Steakpedia could not confirm which one is in use today.

04The story

Seafire opened with Atlantis The Palm in 2008 as the resort's signature steakhouse. By 2012 Atlantis bought around 25 whole cattle a month and still topped up with half a metric ton each of striploin, fillet and rib eye a month for Seafire alone, then a 278-seat room. In August 2022 chef de cuisine Steven Fair launched a new menu (Khaleej Times gave 180 seats); in 2025 the restaurant refreshed its interiors and bar. Atlantis' own blog says it was named Best Steakhouse at the Time Out Dubai Restaurant Awards 2011; in 2026 it won that category again.
