Why go

Quebracho only. Chef Santiago Garat cooks exclusively with that hardwood, per Time Out in October 2026, and the grill is the first thing a guest sees: Michelin describes flames and embers behind the counter at the door. Corte Comedor began as a butcher shop, and the shop still trades next to the dining room, selling cuts to take home. One partner owns a meat-packing plant, which Perfil says secures the traceability of each animal. The Michelin Guide has recommended the house three years running, 2024 to 2026. The menu runs by cut, with house sausages, offal and vegetables cooked over the same embers.

01What to order

02The beef

Two accounts of the animal. Time Out, in October 2026: eight-tooth Hereford cows of about 570 kg / 1,257 lb, raised on grass at Estancia Caldenes in Buenos Aires province. Michelin's listing: two of the four partners run a plant that specializes in Angus, and a diner can learn the breed, size, origin and diet of each animal. Perfil adds that the beef rests about ten days after slaughter, and that the bife angosto and bife ancho are dry-aged for 40 to 60 days. The menu has an aged section with two cuts.

03The fire

Quebracho and nothing else, per Time Out. The grill sits behind the counter, flames in view. Vegetables share the embers: carrots with smoked labneh, smoked squash, broccoli with a fermented-bean aioli. A cauliflower comes with a golden crust. Order the ceja.

04The story

Corte Comedor opened in 2018 in Belgrano. Its partners include the owners of a meat plant, a charcutier (named by Time Out in 2025 as César Sagario) and Garat, whom Perfil calls a disciple of Francis Mallmann. The charcuterie shows on the menu: chorizos in many flavors, from chicken with green curry to jalapeño, plus merguez, chistorra and morcilla. Michelin listed the house in its first Buenos Aires guide in 2024 and kept it in 2025 and 2026.

05The practical

Avenida Olazábal 1391, Belgrano. The menu, with prices, is online at hola.menu/cortecomedor; the figures above are from October 2026 and give no weights. The butcher shop next door sells cuts to take away, useful when the dining room is full. Steakpedia found no published hours or phone number.
