Why go
Every steak here starts on a Stanbroke property. Queensland Country Life described the company in 2016 as family-owned, vertically integrated and running more than 1.6 million hectares, and reported that it supplies Black Hide's entire steak menu. The house says the cattle graze for most of their lives before moving to rations of Australian wheat and barley. One supplier keeps the menu short and legible: Angus at marble score 3+, Wagyu at 5+, each cut with its weight and price. This is the Gambaro family's original Black Hide, opened in 2013 across Caxton Street from the family's seafood restaurant, and it won Australia's Best Steak Restaurant at the Restaurant & Catering awards in 2014.

02The beef
Two breeds, one producer. Stanbroke Angus at marble score 3+: eye fillet 200 g / 7 oz (A$79), rib eye 350 g / 12 oz (A$105), sirloin 350 g / 12 oz (A$82), T-bone 500 g / 18 oz and tomahawk 1,200 g / 2.6 lb. Stanbroke Wagyu at 5+: eye fillet 200 g / 7 oz (A$89), rib eye 300 g / 11 oz, sirloin 300 g / 11 oz (A$112) and rump cap 250 g / 9 oz. The house describes pasture for most of the animal's life and a finish on wheat and barley; it does not state the days on grain. Its site also lists certified organic Stanbroke beef (NASAA and USDA Organic), but the April 2026 menu shows no organic steak. No source mentions dry-aging at Caxton Street.
03The fire
Steakschool, in a profile published around 2020, says Black Hide cooks on a Montague broiler imported from Chicago, with a high-heat center and a plancha top, and that the house claimed to be the only one in Brisbane using it. Per that profile, the broiler renders fat from the surface to build a crust. No source names wood or charcoal at Caxton Street.
04The story
The Gambaro name in Brisbane dates to 1953, when Giovanbaptista Gambaro opened a fish-and-chip shop in South Brisbane with his sons Domenico and Michael; the brothers founded the Gambaro Seafood Restaurant on Caxton Street in 1974. In June 2013 the family opened a steakhouse across the road, first as Cut Steakhouse & Tapas, soon renamed Black Hide; Steakschool says the building had been a fish-and-chip shop. In 2014 it was Restaurant of the Year at the Queensland Restaurant & Catering Awards for Excellence and Australia's Best Steak Restaurant nationally, a title Queensland Country Life reported it won again in 2016. A second Black Hide later opened at Treasury Brisbane and moved to Queen's Wharf in 2024.
