Why go

The animal comes first here, and the house names it. Its website lists two cattle farmers: Ladislas Roche in the Morvan, who crosses Salers with Angus for slow growth outdoors, and Samuel Fouillard near Soissons, in the Aisne, an early breeder of the same 'Salangus' cross. Louis-Marie Martin, a former wine merchant trained at the butcher Le Bourdonnec, runs the stall in the Marché des Enfants Rouges, which the house calls the oldest covered market in Paris. The Infatuation, in December 2025 and again in October 2026, described the format: pick a dry-aged steak from the case, or give the butcher a budget, and it comes griddled and sliced on a board.

01What to order

  • Dry-aged steak from the caseChosen by weight or by budget; The Infatuation (2025–2026) says it is served sliced on a butcher's board. No source gives the aging days.
  • Steak tartareTime Out's November 2022 review described it with chimichurri and grenaille potatoes at €22, made with beef aged one month.
  • Char-grilled vegetables and sourdoughWhat comes instead of frites, per The Infatuation.
  • Corsican veal from the Abbatucci farmRose veal of the 'vache tigre' breed, raised outdoors and suckled by its mother; €58/kg in Le Fooding's 2024 entry.
  • Sandwich of the dayTime Out's June 2026 list mentions meatballs for the daily sandwich. There is no dessert: the counter serves only protein.

02The beef

Breed: Salers × Angus, from two farms, per the house. Feeding: slow growth outdoors, the house says; it states that all its meat, of every species, comes from slow-growing animals. Time Out, in 2022 and in its 2026 list, names beef from the La Ranche farm, a name the website does not use. Aging: the case is dry-aged, per The Infatuation; Time Out gave one month for the tartare beef in 2022. The same 2022 review listed case prices of €38.50/kg for Angus steak and €58.50/kg for Salers rump. Beyond beef: Gascon black pork from the Tessou farm, AOP salt-marsh lamb from Mont-Saint-Michel, poulardes from Culoiseau and pigeons from the Anezo family. The number: one month, for the tartare beef.

03The fire

The steak is griddled, per The Infatuation; Time Out's 2026 list says the meat is seared briefly on the grill. No source names the fuel or the equipment behind the counter.

04The story

Paris Eater dates the stall to 2020. The house frames it within the 'Meat Revolution' movement, which it says one of its two founders started: better-paid farmers, fewer intermediaries and the whole animal on the counter, nose to tail. Before the butcher's block, Martin sold wine at Le Quinze Vins, according to Time Out. In November 2023 the television show F*ck, That's Delicious spent a morning with him, breaking down a lamb and checking on dry-aging pigeons.
