Why go
Blanca names its beef by breed and country. Paris Zigzag wrote in May 2026 that the meat comes from Galicia or is Holstein, a dairy breed; the 2023 menu read by Do It in Paris added an entrecôte (rib-eye steak) of Argentine Angus. The bistro belongs to the Argentine cook Fernando de Tomaso, of Biondi, and his sister Violetta Hernandez, and it carries the name of their Basque-born grandmother, Blanca Villanueva. The cooking is Argentine with Basque accents; the room is small, 14 covers in France Today's count, in stone and wood.

01What to order
- Entrecôte Angus d'Argentine (Argentine Angus rib-eye)€34 on the March 2023 menu; France Today described it with baby potatoes and chimichurri.
- Côte de bœuf Holstein, to shareOn the same 2023 menu, to share; no weight or price published.
- Hampe de bœuf (skirt steak)€25 in 2023; in November 2022 it was Angus, €26, with a marrow bone.
- Wagyu carpaccioA starter named in Le Bonbon's guide, updated in September 2026.

02The beef
Three beef sources on the record. Holstein, a dairy breed, for the côte de bœuf to share. Angus from Argentina for the entrecôte, and Angus again for the hampe in 2022. Beef from Galicia, per Paris Zigzag, without the breed. ParisBouge, after a visit in January 2023, wrote of pieces aged up to eight weeks; the menu Steakpedia could read does not state aging, so the figure is that guide's. No source gives grass or grain feeding. The number: €34, the Argentine Angus entrecôte in 2023.
03The fire
No source says how Blanca cooks its beef: no grill, fuel or oven is named for the rue Keller kitchen. Le Bonbon writes that Biondi, De Tomaso's first restaurant, grills over the same charcoal used in Buenos Aires; that is the other house.
04The story
Fernando de Tomaso opened Blanca seven years after he arrived in France, per France Today, as his second Paris restaurant after Biondi on rue Amelot. Sortiraparis reported it as a new address in November 2022. His sister Violetta Hernandez runs the room. The menu leans on what their grandmother Blanca cooked, simple dishes with few ingredients according to Do It in Paris, and the flan follows her recipe. The house also hosts occasional concerts, announced on Instagram.
