Why go

The fire is the menu. Brutos opened in early 2017 around an open grill built in the style of southern Brazil, and everything goes over it: beef, fish, vegetables. Time Out wrote that the heat changes with the spot on the grate, edge, center or end, and the cook moves the meat to match. The signature is a côte de bœuf (bone-in rib steak) for the table. Time Out's June 2026 list of Paris addresses for meat lovers named it again, cooked over the flame with mash and a marrow bone. The wine is natural, chosen by Ninon Lecomte, who now also runs the kitchen.

01What to order

  • Côte de bœuf (bone-in rib steak), for twoAged 35 days and priced at €120 to share in Time Out's April 2023 review, with chimichurri, mash and a marrow bone.
  • Steak frites with chimichurriThe single-portion steak The Infatuation named in November 2023. Le Fooding says the chips are fried twice in beef fat.
  • Sunday roast chickenCooked over the embers; €29 for a half or €58 for a whole bird, with chips, on Le Fooding's July 2026 update.
  • Boudin noir with beetroot jamA €13 starter in 2023, before the beef.

02The beef

The beef on record is the côte de bœuf. In April 2023 Time Out listed it at 35 days of aging, served for sharing. In 2017 the opening menu carried a rib steak dusted with cassava flour and a cachaça sauce, plus smoked beef croquetas. No source names the breed, the farm or the country of the beef. Le Fooding's 2026 price range runs from €28 to €120 for mains, which puts the côte at the top.

03The fire

An open grill, southern Brazilian style, from the first day. Time Out in 2017 described an open pit where position sets the heat. In May 2023 the Festin Paris newsletter wrote that everything goes over a wood fire. Le Fooding's 2026 entry describes charcoal and embers. So the record says wood and charcoal, and no source gives the species or the mix. The grate does fish and greens too. Sit near the open kitchen.

04The story

Lucas Baur de Campos, a Brazilian cook from Rio Grande do Sul who had worked in Joël Robuchon's kitchens, opened Brutos in early 2017 with his partner Ninon Lecomte, after about two years of planning, per Time Out. The couple later opened Bar Principal next door. Baur de Campos died in Paris on May 27, 2026, aged 38, the Brazilian paper O Hoje reported. Le Fooding's July 2026 update says Ninon Lecomte has taken over the kitchen of the grill he built.
