Why go

Two fires. Everything here goes over the embers or onto the spit. Jean-François Piège, then already the chef of the two-star Le Grand Restaurant, opened Clover Grill with Élodie Piège in late November 2016, in a former tavern on rue Bailleul. The dining room is built around the meat: a marble bar, a large open kitchen and a made-to-measure meat cabinet framed by two logs. The beef comes from several countries and breeds, by weight. World's 101 Best Steak Restaurants ranked it No. 46 in 2024, No. 42 in 2025 and No. 53 in 2026.

01What to order

02The beef

Five beefs on the 2026 record. The Noire de Baltique, which France Today described in 2017 as German-born and Polish-raised, aged over beech shavings in a warehouse in the port of Hamburg. Salers from France. Creekstone Prime Angus from Kansas. Galician Blonde from Spain. Irish beef for the entrecôte and Simmental from the Black Forest, per Paris Zigzag in April 2026. The Michelin listing calls the beef dry-aged. No source gives the number of days.

03The fire

Embers for the steaks, the spit for the joints. Lesrestos and Time Out both describe meat cooked over embers or turned on the spit. The spit handles the leg of lamb and, in 2017, a pineapple for dessert. Celeriac went into the embers. No source names the fuel. Ask for the côte on the embers.

04The story

Clover Grill was the Pièges' second Clover. The first opened in Saint-Germain-des-Prés in December 2014; the grill followed in late November 2016, between the Louvre and Les Halles. In 2017 France Today listed four sauces with the steaks: Sarawak pepper, béarnaise, Bercy and a reduction of blackcurrants and blackberries. The artist Matthieu Cossé painted a large mural for the room. Time Out placed it No. 46 on the 2024 World's 101 Best Steak Restaurants list.
