Why go

In 1989 two friends opened a neighborhood parrilla on the corner of Honorio Pueyrredón and Luis Viale, with room for 90. By 2024, Clarín counted about 11,000 covers a month and 140 seats, after a 2015 expansion. The house kept the old format, a grill of charcoal and espinillo wood, achuras to start, cuts by weight and home-style pasta, and added, around 2022, a dry-aging program of 45 to 60 days that Time Out describes as done in full view. The queue at the door, noted by Time Out in 2025, is part of the picture.

  • Asado de tira (cross-cut short ribs)The most ordered dish, about 300 kg / 661 lb a week in 2024, per Clarín.
  • Achuras with lemon and saltThe offal plate La Nación singled out in 2011; the city's guide also suggests starting with achuras.
  • Entraña (skirt) and ojo de bife (rib-eye)With the asado de tira, the cuts Time Out lists as most requested.
  • A dry-aged cutAged 45 to 60 days; the house said in 2024 that it costs about 30% more than a standard cut, not double.

02The beef

Don Zoilo added dry-aged beef about two years before Clarín's January 2024 report, aging it 45 to 60 days in German-made cabinets that control humidity, air flow and temperature, with a carbon filter and ultraviolet light. Time Out repeats the range in 2025 and adds that the aging is visible to diners. No source names the breed, the estancia or the feeding, so the page leaves them out.

03The fire

Clarín's 2024 report describes a grill fed with charcoal and espinillo wood. The parrilla works both services: the menu is the same at lunch and dinner, though prices differ between them.

04The story

In 1989 two friends, whose names the sources do not give, opened the parrilla at the corner of Luis Viale; La Nación wrote in 2011 that it was there before Palermo Hollywood, Puerto Madero and Las Cañitas became dining districts. In 2011 it served about 7,000 covers a month and 180 kg / 397 lb of asado each weekend. In 2015 it added 50 seats to the original 90. By 2024 the count was 11,000 covers a month. Buenos Aires Portal describes dark wood furniture, white tablecloths, plates bearing the house name and waiters in bow ties. Clarín and the city both give 1989.
