Why go01

Fogón Asado is a counter around a fire. Diners sit at a bar that wraps the grill and the cooks. There is no à la carte. Two set formats. At each step the grill cooks explain where the wood comes from, how the cattle were fed and which sauces go with what. The lists rate it. No. 22 in the World's 101 Best Steak Restaurants 2026, the best-placed Argentine parrilla that year. No. 35 in 2025, no. 36 in 2024. Recommended in the Michelin Guide Argentina 2024, 2025 and 2026, per the house. In November 2025 Tripadvisor's Travelers' Choice named it no. 1 in the world for fine dining.

03The beef

Angus steers, raised on grass in La Pampa, per Time Out. The menu runs through the animal and the parrilla's classics. Time Out's 2024 sequence: ceja, ojo de bife, eight-hour costillar, matambre, provoleta, mollejas, morcilla, chorizo. The Michelin Guide names provoleta, Patagonian trout, chorizo, morcilla, panceta, smoked ceja and ojo de bife. The steps change. The fire does not.

04The fire

Wood from northern Argentina, with three jobs. Lighter white wood starts the fire. Red wood makes the embers. Quebracho gives the place its smell. The grill is custom-built. A rectangular bar circles the kitchen, with a brigade of six, per Le Petit Journal. The meal runs past two hours.

05The story

Fogón opened in 2018 in Palermo. The founders are Alex Pels, from Buenos Aires, Danielle Jenster, from Copenhagen, and Argentine chef Sebastián Cardamoni, who leads the kitchen. Pels and Jenster are partners in life and in business. Jenster came to Argentina through family links to Mendoza wineries. Uriarte opened in 2018. Gorriti followed in 2020, in a reformed old Palermo house with front-row seats by the fire. In October 2026 Cardamoni represented Fogón at Meat & Fire, at the Hipódromo de Palermo.
