Why go

For the long lunch that becomes an evening, or the dinner where half the table wants oysters and the other half a steak, SK Steak & Oyster has filled the ground floor of The Calile Hotel since December 2019. It is the second restaurant there from Simon Gloftis, after Hellenika, with executive chef Kelvin Andrews and manager Theo Kampolis as partners. The menu sorts its steaks by producer and marble score, from grass-fed O'Connor at BMS 2–4 to Kiwami and Mayura Station Wagyu at BMS 9+, and in 2026 it entered the World's 101 Best Steak Restaurants list at No. 77.

01What to order

02The beef

The menu reads like a tasting of Australian grading. O'Connor grass-fed beef at BMS 2–4 covers the petite fillet, New York sirloin, prime rib, T-bone and chateaubriand. Stockyard supplies three lines: Prospect Black Angus at BMS 5+, Silver at BMS 6–7 and Kiwami Wagyu at BMS 9+. Mayura Station Platinum, also BMS 9+, comes as sirloin only. The dry-aged and large-format section, sold by the 100 g / 3.5 oz, lists a 41-day sirloin and a 41-day porterhouse at BMS 5+ and a BMS 9+ T-bone. When the restaurant opened, Broadsheet described dry-aged beef and duck hanging in a large open cabinet in view of the room.

03The fire

Man of Many reported that the kitchen cooks over ironbark for heat and applewood for flavor.

04The story

SK Steak & Oyster opened in December 2019 under The Calile Hotel, on the Ada Lane side of James Street. Richards and Spence, the Brisbane architects behind the hotel, designed an L-shaped ground floor of about 500 square meters that seats up to 120, with 15 booths along the Wandoo Street windows. In February 2026 it placed No. 16 in the Australian top 30 of World's 101 Best Steak Restaurants, and in March it debuted at No. 77 on the world list.
