Why go
Fire first. Agnes runs without gas or electricity, per the house. Ironbark, apple, cherry and olive wood feed two charcoal pits and a wood-fired oven. One pit cooks seafood and starters. The other cooks meat. Time Out counted three Argentine-style gaucho grills, and they light most of the room. The kitchen is open, inside an old warehouse in Fortitude Valley. The record is public. Gourmet Traveller named Agnes its Restaurant of the Year in 2023, only the second Queensland winner, after E'cco in 1997. In 2026 it entered World's 101 Best Steak Restaurants at No. 20, and placed No. 4 in that list's Australian top 30.

02The beef
Two breeds, three grades. Angus at marble score 3+, labeled long-fed. Wagyu at 6+ for the striploin and 9+ for the shortloin, the shortloin from Westholme in Queensland. In an interview on Westholme's site, co-owner Ben Williamson says he uses its Wagyu all year and changes only the garnish with the season. The same piece describes a second dry-aging cabinet in the dining room, and dry-aged flap cooked slowly over embers, then flamed hot. The menu prints no weights.
03The fire
Wood only. Ironbark, apple, cherry and olive, per the house. Two charcoal pits: one for seafood and starters, one for meat. A wood-fired oven beside them. The grills sit in view of the tables. Smoke runs through the menu, from smoked butter on the potato sourdough to smoked ox tongue. Gourmet Traveller's 2023 judges singled out how Williamson balances it in a kitchen with no gas. Order the shortloin.
04The story
Agnes was due in 2019. Approvals and the pandemic pushed it back, so the team first ran a pop-up bakery selling wood-fired breads and pizzettes, which closed in July 2020. The restaurant opened that August. Its owners, Frank Li, Ty Simon and Bianca Marchi, also run Same Same and Hôntô under the Anyday name, with Ben Williamson as co-owner and chef. In May 2026, almost six years in, the kitchen launched 25 new dishes with Spanish and Mediterranean leanings.
