Why go

Ironbark burns under every steak. Woodcut grills its beef over ironbark embers on a bespoke flywheel grill. The menu asks for 45 minutes from ordering, and up to an hour for the large cuts. Around it run four open kitchens, one each for fire, smoke, steam and ice, across 260 seats on the ground floor of Crown Sydney. Ross and Sunny Lusted, who ran The Bridge Room from 2011 to 2019, built it. The steak list runs from a 200 g / 7 oz eye fillet to a 1.8 kg / 4 lb tomahawk.

01What to order

02The beef

Four groups on the grill list. Full-blood Wagyu at 9+: Robbins Island rib eye, 500 g / 18 oz, A$320; a 200 g / 7 oz center-cut rib eye from New England, A$170; Shiro Kin rump cap, A$115. First-cross Wagyu: a Chauvel citrus-fed rib eye Delmonico, 7+, 800 g / 28 oz, A$330. Black Angus: the O'Connor grain-fed tomahawk and the Black Onyx T-bone. Pasture-fed breeds: the Galiciana rib eye from a five-year-old animal, and O'Connor sirloin and eye fillet at 3+. The sirloin is the only beef cut marked dry-aged. No number of days is given.

03The fire

Wood and charcoal run the room. Steaks go on the flywheel grill over ironbark embers. An ash grill takes the Wagyu and veal tongue skewers. A wood oven bakes the bread and roasts the lobster and the duck. Steam kettles cook the mussels and pippies. Crown's 2020 release described wood and charcoal grills, wood ovens and steam kettles; Broadsheet adds a robata grill.

04The story

Crown announced Woodcut in 2020 for the opening of Crown Sydney that December. Ross and Sunny Lusted had owned The Bridge Room from 2011 to 2019. Ross Lusted told Time Out the restaurant was planned for three years and had been in the works for about fifteen years. Crown says Woodcut won one hat in the Good Food Guide Awards and an award for Australia's top hotel wine list; it gives no year for either.
