Why go

Steersons reads like a producer list. Its dining menu, checked on Oct. 29, 2026, names six beef producers and states the feeding for most cuts: grass-fed Pasturelands and O'Connor, grain-fed Nolan, Westholme F1 cross Wagyu, Stone Axe full-blood Wagyu and Chauvel full-blood Wagyu fed on grain and citrus. Each steak carries its marble score, from MBS 2+ on the O'Connor to MBS 9+ on the Stone Axe bavette. The restaurant sits on the upper level of King Street Wharf, reached from Lime Street, and reopened in 2026 after a four-month refurbishment with a new menu and a new executive chef.

01What to order

02The beef

Grass and grain sit side by side. Pasturelands supplies grass-fed eye fillet, rib eye, striploin and flat iron. O'Connor's cattle graze coastal pasture in Gippsland all year, per a September 2026 review; its ox steer comes at MBS 2+. Nolan Private Selection is grain-fed. On the Wagyu side, Westholme F1 cross runs from MBS 4+ to 5+, Stone Axe full blood reaches 9+, and Chauvel full blood is, per the same review, raised for more than 430 days on a grain and citrus diet in Queensland's Southern Downs. The dry-aging fridge also holds tomahawks, and the house can dry-age cuts for booked events with seven days' notice. The menu gives no aging time.

03The fire

The steaks sit under a menu heading called 'Over the Fire', and the house describes its cooking as open flame. No source names the fuel or the grill.

04The story

Steersons was already operating on King Street Wharf in March 2015, when its menu named Havericks dry-aged beef: a Riverina rib on the bone, MSA-graded, pasture-fed and aged six to eight weeks. In 2026 it closed for a four-month refurbishment and reopened with a new menu and executive chef Thai Sams, formerly of Bentley and Botanica, under the idea of 'salt, fire and water'. No source gives the year it first opened.
