Why go

The grill weighs 900 kg / 1,984 lb and burns wood. Beside it, a charcoal oven. Bopp & Tone, Applejack Hospitality's first restaurant in the Sydney CBD, built its menu around the two, per Broadsheet. The steaks run from a grass-fed Gippsland tenderloin to a kilo of fullblood Wagyu rib eye. Each line gives the producer, the region, the days on grain and the marble score. Broadsheet's 2026 guide notes the smoky char the grill puts on the steaks. The rest of the menu leans Mediterranean.

01What to order

02The beef

Six steaks, six producers or regions, feeding stated on each. Grass-fed: the Gippsland Angus tenderloin, MB2. Grain-fed Angus: Jack's Creek flat iron (180 days, MB3) and Riverine bone-in rib eye (120 days, MB3+). Wagyu: Darling Downs rump cap (300 days, MB8+), Westholme sirloin (330 days, MB6–7) and Stone Axe fullblood rib eye (400 days, MB9). The menu says nothing about aging. Servers offer steak specials. In 2018, before opening, the group announced pasture-fed Brooklyn Valley steaks; they are not on today's menu.

03The fire

Two fires. A wood grill of 900 kg / 1,984 lb, per Broadsheet. A charcoal oven beside it. The house says the menu is cooked on one or the other. Thick, bone-in cuts suit a grill that heavy. Ask for the rib eye on the bone.
