Why go

In 1959 Paul Gineste de Saurs created at Porte Maillot the formula this house still serves: a green salad with walnuts, then sirloin with the house sauce and matchstick fries, with nothing left to choose but the cooking and the dessert. His daughter Marie-Paule carried it into Le Relais de l'Entrecôte, the group she runs as Marie-Paule Burrus, and Wikipedia describes the address on rue Saint-Benoît, known as L'Entrecôte Saint-Germain, as its oldest branch in Paris. The steak comes in two servings, the second brought round after the first, and the recipe for the sauce remains a family secret.

01What to order

  • The single menuWalnut salad, contre-filet (sirloin) with the house sauce and pommes allumettes (matchstick fries). The site prints no price; Do It in Paris gave €26.50 around 2024 and Lesrestos €28.50 in October 2024.
  • The second servingSteak and fries come in two rounds, per Do It in Paris and Le Bonbon (2024).
  • ProfiterolesChoux with vanilla ice cream, hot chocolate sauce and almonds, from the house dessert list.
  • Vacherin du RelaisMeringue, vanilla and praline ice cream, hot chocolate sauce and Chantilly; a summer version comes with raspberry.
  • Crème brûlée or the gâteau du RelaisTwo of the other desserts; Lesrestos gave €7 to €9 for desserts in 2024.
  • A bottle of Château de SaursThe wines come from the family estate and are all organic, according to the house.

02The beef

The cut is contre-filet, the French name for sirloin, served sliced. The house calls it tender and says nothing more: no breed, no origin, no aging, and no other source read by Steakpedia fills that in. The sauce draws the attention instead. Le Monde once printed a list of its ingredients (chicken livers, thyme, cream and white Dijon mustard) that Hélène Godillot of the sister house at Porte Maillot told The Independent was inaccurate; easyJet Traveller in 2021 described cream, tarragon, Dijon mustard and a lot of butter, and Le Bonbon in 2024 counted 25 ingredients.

03The fire

No source describes the grill or how the steak is cooked.

04The story

Paul Gineste de Saurs, a wine grower from Gaillac, took over Le Relais de Venise in 1959 to secure an outlet for the wines of Château de Saurs, and replaced its Italian menu with steak-frites. His children took the formula in three directions. Henri Gineste de Saurs opened L'Entrecôte in Toulouse in 1962. After their father's death in 1966, Hélène Godillot took over Porte Maillot. Marie-Paule Burrus built Le Relais de l'Entrecôte. Her group now lists four Paris houses (Marbeuf, Saint-Benoît, Montparnasse and Saint-Honoré) and others in Geneva, Zurich, Beirut, Dubai, Kuwait, Qatar, Saudi Arabia and Egypt; in Geneva she had the interior protected as heritage in 2011. No source gives the year the Saint-Benoît house opened, so Steakpedia gives only the date of the formula, 1959.
