Why go
Cote starts with two kinds of American cattle: USDA Prime Black Angus and American Wagyu, dry-aged in the house. Simon Kim, born in Seoul, opened it in Flatiron on June 8, 2017, as what the house calls America's first Korean steakhouse, joining the table grill and banchan of Korean barbecue to the aged beef of the American steakhouse. Each table has its own grill, run by the staff or by the guests themselves, per the house. The Michelin Guide gave it a star in its 2018 edition and it has kept one since. On the World's 101 Best Steak Restaurants list it was No. 10 in 2025, the only US entry in the top ten, and No. 21 in 2026.

02The beef
Two lines of beef, both American. USDA Prime Black Angus covers the dry-aged ribeye, filet mignon, hanger, skirt and the two galbi; American Wagyu covers the ribeye, NY strip, the house COTE Steak and The Flatiron, and is the beef the menu names for the Butcher's Feast. A grass-fed ribeye labeled Niman (US$75) and Miyazaki Wagyu by the ounce complete the list. The weekly aging card goes further: USDA Prime ribeye at 60+ days (US$33/oz), 90+ days (US$38/oz) and 120+ days (US$42/oz); American Wagyu at 45+ days, with a marbling score of 9+ (US$42/oz); T-bone and porterhouse at 45+ days (US$12/oz). Time Out, in 2025, wrote that every cut in the feast is dry-aged in-house. The number: 120 days.
03The fire
Each table has a gold-rimmed Shinpo grill set into it; the house says its ceramic charcoal lets the steaks char without filling the room with smoke. Time Out compared it to an integrated cooktop and noted that the extraction keeps smoke off clothes. The house seasons with its own salt blend: British Maldon, French gray salt and Korean thousand-day sea salt.
04The story
Cote opened on West 22nd Street on June 8, 2017. Simon Kim had opened Piora in the West Village in 2013; it earned a Michelin star in 2016. Cote took its star in the 2018 guide, months after opening; Wikipedia's list shows it starred every year from 2021 to 2025. Kim's group, Gracious Hospitality Management, has since opened Cote in Miami (2021), Singapore and Las Vegas (October 2025). On April 18, 2026, a second New York restaurant, COTE 550, opened on Madison Avenue, where the Butcher's Feast costs US$118. Beneath the Flatiron dining room sits Undercote, the group's cocktail bar.
