Why go
The Dynamo Room starts from the calendar rather than the breed. Its grill menu states how long each large cut has hung: a bone-in NY strip at 30 days, a porterhouse at 45, a split-bone ribeye and a cowboy ribeye at 50. The menu names no breed, ranch or USDA grade, and Steakpedia does not supply one. The house is the steakhouse of Sunday Hospitality, the team behind Sunday in Brooklyn and Café Chelsea, and opened on May 31, 2025, beside Madison Square Garden, with chef and partner Derek Boccagno at the stove.

02The beef
Three aging periods on one menu, each tied to a cut and a weight: 30 days for the 14 oz bone-in strip, 45 days for the 36 oz porterhouse, 50 days for the 22 oz split-bone and 34 oz cowboy ribeyes. The filet mignon, the sirloin and the 10 oz strip carry no aging note. When the house opened in 2025, Time Out counted eleven cuts presented on a rolling cart, including a KC strip; the October 2026 menu lists seven steaks from the grill and no KC strip. Breed, origin and grade are not stated anywhere.
03The fire
The steaks sit under the heading "From the Grill"; no source names the fuel or the grill.
04The story
Time Out reported the opening on June 23, 2025: Sunday Hospitality, co-founded by Jaime Young, with interiors by Evidence of Things, embroidered booths, a Sputnik-style sculpture over the bar and portraits that rotate every six months through KARMA gallery. Time Out reviewed it again on April 30, 2026, describing a red room, an emerald room and a patio that opens in summer.
