Why go
For the late dinner you plan three weeks ahead, 4 Charles Prime Rib is a small, wood-paneled room on a quiet West Village block where the main event is roast prime rib, carved in four different cuts. It comes from Hogsalt, the Chicago group of Brendan Sodikoff, whose Au Cheval burger has its New York version here. Resy counted 36 seats when it opened, and Time Out and Tasting Table both count ten tables, which is why a booking takes planning. The house calls itself a late-night dining den, and the hours agree: the kitchen keeps going until 11:30 pm most nights. It was No. 44 in the World's 101 Best Steak Restaurants 2025; it does not appear on the 2026 list.

01What to order
- English Cut prime ribThe thin-sliced cut, US$79.99 on the October 2026 menu; the lightest way into the roast if the table also wants the burger and sides.
- Chicago Cut prime ribThe center cut, US$104.99. In 2017 Time Out listed it at 16 oz for US$65.95.
- King Cut prime ribA double cut on the bone, US$144.99, the largest of the four.
- 4 Charles CutPrime rib aged with gorgonzola, US$119.99, in limited numbers according to the menu.
- 10 oz Double Wagyu CheeseburgerUS$38.99; a farm egg adds US$4.49 and bacon US$8.99. In 2017 Time Out called the burger a near replica of the one at Au Cheval.
- Dry-aged bone-in ribeye, 22 ozUS$129.99 at dinner. The brunch menu lists the same USDA Prime cut with 42 days of dry-aging.
02The beef
The roast is USDA Prime rib of beef, salt-crusted and served with its natural jus and horseradish cream. Beyond the roast, the dinner menu lists a dry-aged bone-in ribeye of 22 oz, a 16 oz bone-in filet mignon and a 16 oz bone-in Wagyu New York strip. The weekend brunch menu adds a 32 oz Wagyu porterhouse from Snake River Farms at market price and gives 42 days of dry-aging for both the porterhouse and the ribeye. The double cheeseburger is also Wagyu. The menu does not name the ranch behind the prime rib, its weight or whether it is aged.
03The fire
The prime rib is roasted, not grilled. The menu calls it Roast Prime Rib of Beef, and Time Out reported in 2017 that the rib was roasted for 12 hours before it was sliced. No source names the broiler or grill used for the steaks.
04The story
4 Charles opened at the end of 2016: West View News, in February 2017, described it as about two months old as of early January. Resy listed it among the new restaurants of January 2017 and introduced Brendan Sodikoff as the founder of Hogsalt Hospitality in Chicago; the website still carries the Hogsalt name in 2026. Prices have doubled since the first menus. In April 2017 Time Out listed the English cut at US$39.95 and the double burger at US$18.95; in October 2026 they are US$79.99 and US$38.99. In May 2025 Time Out reported its No. 44 ranking on the World's 101 Best Steak Restaurants list.
