Why go
Hawksmoor starts with British cattle: grass-fed, traditionally reared on small farms, then dry-aged for 35 days. This is where the group began, in 2006, on Commercial Street, a short walk from Christ Church Spitalfields, whose architect, Nicholas Hawksmoor, gave it its name. The menu credits the Longhorn, a native breed in limited supply, with starting it all, and rare and native breed steaks come through a program with the Rare Breeds Survival Trust. Large cuts are sold by weight and grilled over live charcoal. In 2022 Hawksmoor was No. 1 in World's 101 Best Steak Restaurants; that source names the brand, not this room.

02The beef
Grass-fed British cattle, reared the traditional way on small farms; Hawksmoor Dublin is the exception, with Irish beef. The breed with a name on the menu is the Longhorn, a native breed: in 2022 The Nudge reported that it came from the butcher The Ginger Pig, chosen after the founders tested breeds from around the world. Other rare and native breeds arrive through the Rare Breeds Survival Trust program and are served at weekends. The Steak Flight, for four or five, lines up four animals: rump from Hawksmoor Farms, sirloin from Wildfell Wagyu, Longhorn rib-eye and Aberdeen Angus fillet. The menu names no grade. The number: 35 days.
03The fire
Charcoal. The house sums up its cooking as dry-aged steak cooked over charcoal, and the menu says the large cuts are grilled over live-fire charcoal. Scallops and monkfish go over the same coals.
04The story
Will Beckett and Huw Gott, childhood friends, opened the first Hawksmoor here in 2006 and still lead the company. The Nudge tells the start: a lease on an old kebab shop signed close to bankruptcy, no hot-food license yet, a loan refused by the banks, Gott's parents remortgaging their house and café, furniture bought on eBay. The Sunday roast has been served since 2008. Seven Dials followed in 2010, and in 2013 Graphite Capital bought a majority stake at a £35 million valuation. The Spitalfields bar won Best International Restaurant Bar at the 2016 Tales of the Cocktail Spirited Awards, and the group became a certified B Corp in 2022.
