Why go

Fire first. Brat cooks over an open wood grill at the center of its kitchen. The model is Basque: the grills of San Sebastián, filtered through Tomos Parry's Welsh roots. The fish is the name, since brat is an old English word for turbot. The beef is why it sits on steak lists: No. 24 in the World's 101 Best Steak Restaurants 2025, No. 17 in 2026. It has held one Michelin star since the 2019 guide. The September 2026 menu sells a 1.5 kg / 3.3 lb Angus rib and a Hereford sirloin in two sizes. Big cuts, for the table.

01What to order

02The beef

British beef, named by breed. The September 2026 menu lists Angus for the rib and the tartare, Hereford for the sirloin, Jersey for the fillet. Its Welsh-language note says all the produce is British. The breeds move with the seasons: Time Out reported eating Shorthorn in 2018, The Nudge listed a Jersey beef chop in 2021. In 2018 the beef chop cost £36 to £58. No source gives aging days.

03The fire

Andy Hayler described an open wood-fire grill, visible from the door, at the heart of the open kitchen. Jay Rayner, in 2018, wrote of a kitchen ruled by burning coals. The turbot cooks for about half an hour over indirect heat, spritzed with vinegar. Restaurant Online described it in 2023 as large cuts of meat and whole fish grilled over wood. No source gives the type of wood.

04The story

Tomos Parry, from Anglesey, trained at The River Café and ran the kitchen at Kitty Fisher's in Mayfair. In March 2018 he opened Brat with restaurateur Ben Chapman, upstairs from Smoking Goat, in a first-floor room that had been a strip club. The first Michelin star came in the 2019 guide, published in October 2018, and it has held one star every year since. In 2020 a Brat pop-up at Climpson's Arch in Hackney became permanent. In 2023 Parry announced Mountain, on Beak Street in Soho.
