Why go

Wooloomooloo starts with the animal and prints the numbers. Its website says every steak is certified Australian Black Angus, and the à la carte menu gives each cut the days it was grain-fed, from 100 to 350, and the weeks it was wet-aged, two to four. The Wan Chai house is on the 31st floor of The Hennessy, 256 Hennessy Road, with a dining room for 70 and a semi-private room for 14. The group says it opened its first restaurant in 2004; no source gives the year of this one.

01What to order

02The beef

The house is specific about the animal. The website says all steaks are certified Australian Black Angus. The menu then widens that: a 340 g / 12 oz sirloin is grain-fed for 100 days (HK$495), the two rib-eyes for 200, the USDA Prime sirloin for 300 and the Kiwami Wagyu sirloin for 350, the same as the tomahawk mentioned below; the tenderloin and the Wellington are grass-fed. All are wet-aged two to four weeks. For two, there is a short bone-in rib-eye of about 1 kg / 2.2 lb at HK$1,420 (100 days) and a Wagyu tomahawk of about 2 kg / 4.4 lb at HK$2,480 (350 days, marble score 4 to 5). Each steak is described as handpicked and cut in the house. Every steak comes with one sauce: horseradish cream, béarnaise, five peppercorn, mixed mushrooms or red wine; extra sauces are HK$35. The number: 350 days.

03The fire

A broiler. The website says a special broiler that reaches over 1,000 °F cooks the steaks quickly; the à la carte menu says an 1800 °F broiler. The two figures are the house's own and do not match. No source mentions wood or charcoal.

04The story

The Wooloomooloo group says its first restaurant opened in 2004. Today its website lists Wan Chai with Wooloomooloo Prime in Tsim Sha Tsui, Wooloomooloo Steakhouse in Tsim Sha Tsui East, OMAROO Grill in Central, MOOO! Grill at Mira Place and a house in Singapore. The Wan Chai room has views of Victoria Harbour and Happy Valley Racecourse, per the venue's events listing, and the rooftop above it is permanently closed.
