Why go

Wood and charcoal, low and long. The house dish is the Emperador: a whole beef rib cooked slowly over both fuels. Around it, the classic parrilla cuts at 500 g / 18 oz, whole cuts for sharing, and dishes from the oven and the wood fire. Cauce de los Fuegos opened in December 2022 on the docks of Puerto Madero, after a long refurbishment. The Michelin Guide recommended it in its first Buenos Aires edition, in 2024. Time Out kept it in its October 2026 guide to beef. Tables run outside when the weather allows, facing the docks.

01What to order

02The beef

Grass and Angus. Buenos Aires Portal says the house prioritizes free-range, grass-fed beef; Perfil names the ojo de bife as aged Angus. No source gives the estancia or the number of aging days. For sharing, Time Out lists prime rib-eye, beef shank and flat iron, cooked slowly at low temperature.

03The fire

Two fuels on one grill: wood and charcoal. Time Out describes the Emperador as a whole rib on low heat for six hours; Michelin's listing gives 14 hours for the same dish, and the sources do not explain the gap. The kitchen also works an oven and the wood fire for fish and vegetables: grilled oyster mushrooms, organic carrots with Greek yogurt, mint and cucumber, grilled artichokes. Order the Emperador.

04The story

Perfil dates the opening to December 2022, after extensive refurbishment. Chef Edgar Pronio wrote the menu. Bartender Mona Gallosi designed the bar, with cocktails built on the four elements. Sommelier Celestino Rodríguez works the floor every day and runs monthly tastings with wineries. Michelin's first Buenos Aires guide, in 2024, listed it as recommended. By October 2026 the wine list passed 600 labels, per Time Out, and both Michelin and Time Out had shortened the name to Cauce.

05The practical

Avenida Alicia Moreau de Justo 440, Puerto Madero. Outdoor tables face the docks and the towers. Steakpedia found no published hours, phone or website; the prices above are the most recent with a date, from May 2025, and will have moved. Sides were ARS 6,000 and a salad ARS 9,000 at the time.
