Why go
Siga La Vaca is the answer when the table is long, the appetites vary and you would rather settle the bill before anyone sits down: it is a parrilla libre, an all-you-can-eat grill at a fixed price, with cold dishes and salads also unlimited and one drink and one dessert per person included. Perfil called it a Puerto Madero classic in 2024 and described a relaxed room facing the water, popular with groups of young people and with families. The cow statues at the entrance, which The Infatuation mentions, make it easy to find, and the name itself means follow the cow.

- Chorizo, chinchulines and mollejasSausage, grilled steer chitterlings and sweetbreads: the items from the grill that The Infatuation names.
- The salad tableCold dishes and salads are unlimited at every sitting; on weeknights hot dishes and fries are added.
- Your included drinkOne per person: beer, a soft drink, mineral water or the house wine.
- Dessert from the menuOne per person, also included in the price.
02The beef
The sources describe the format rather than the animal: none publishes the breed, the feeding, the estancia or the list of cuts on the grill, so Steakpedia leaves those out. What they do describe is the spread, asado and offal in Perfil's words, with chorizo, chinchulines and mollejas named by The Infatuation.
03The fire
No source names the fuel or the grill for the Puerto Madero house. What is on record is the parrilla itself, the center of the all-you-can-eat format.
04The story
The Miami New Times, reporting on the chain's first United States branch in Coral Gables, wrote that Siga La Vaca began in Buenos Aires in 1993 and then had 12 locations in Argentina, with a format of more than 30 salads, unlimited meat, three sides and eight desserts. Canal 26 wrote in 2025 and again in 2026 that it has been serving Argentine and foreign guests for almost 30 years, which points to a later date for this house; Steakpedia gives both. Prices rose between October 2025, when weekday lunch was ARS 42,900, dinner ARS 45,900 and weekends ARS 48,900, and March 2026.
