Why go
Charcoal first. Cuerno cooks in a Josper, a closed charcoal oven imported from Spain. Time Out says it burns mesquite. The style is norteño, from northern Mexico: salt, smoke, little else. Ribeye and filet wear a crust of Colima salt. The beef is USDA Prime, grass-fed, aged 24 days, from family ranches in South Dakota, per the menu. Cuerno is the first U.S. restaurant of Costeño Group, founded in Torreón in 2006 and now past 50 restaurants in Mexico and Spain. It opened at Rockefeller Center on June 19, 2025.

02The beef
USDA Prime, says the menu header. Grass-fed. Aged 24 days. Small family ranches in South Dakota. That is the full statement, printed under the Carne Asada list. The opening release in June 2025 said 21 days; Time Out and the 2026 menu say 24, and Steakpedia uses 24. The menu says aged, not dry-aged. The cuts: boneless ribeye at 16 and 28 oz, the bone-in ribeye as a 52 oz tomahawk, filet at 8 and 28 oz, outside skirt at 8 oz, short rib at 15 oz. The Taco Richi, at US$12, puts thin-sliced ribeye in a flour tortilla.
03The fire
A Josper, imported from Spain: a closed charcoal oven with a grill inside. Time Out, in April 2026, says it runs on mesquite and smokes the 12-hour short rib. The same charcoal grills the corn for the esquites, the cauliflower and the seasonal vegetables. The octopus and the whole branzino zarandeado also go over the coals.
04The story
Costeño Group began in 2006 as El Costeñito, a seafood palapa with a few tables, founded by Alberto Martínez and Victor Setién of Torreón, Coahuila. It grew to more than 50 restaurants and twelve concepts in Mexico and Spain. Cuerno New York opened on June 19, 2025, in the Time-Life Building, the group's first restaurant in the United States, and its menu matches the Mexican original, per Como Comí Club. Executive chef Oriol Mendívil, born in Navojoa, Sonora, has led Cuerno's kitchen since 2017, per the house. A tile mural by the Saltillo artist Federico Jordán is made with soil from northern Mexico.
