Why go
Three lines of beef, named on the menu. The Reforma location of Sonora Grill sorts its cuts into a house line called Ganado Premium de Sonora, an imported 100% Black Angus line and a Wagyu Cross line, each with its weights and prices. The restaurant is in the Hotel Barceló México Reforma, at Paseo de la Reforma No. 1, in colonia Tabacalera. The group behind it started in 2004 as a five-table taco shop serving cuts of beef and counted about 40 restaurants by 2022. Its website presents national and imported cuts, prized for marbling and tenderness, alongside signature cocktails.

02The beef
Three lines. The house line, Ganado Premium de Sonora, has four cuts from 300 g / 11 oz to 600 g / 21 oz. The menu does not say where the animals come from; the group's site says it serves both national and imported cuts, and Emprendedor reported that, after supply and quality problems with domestic beef around 2009, the group began importing from a US supplier. The imported line is 100% Black Angus, four cuts from 300 g / 11 oz to 800 g / 28 oz, two of them labeled Prime. The Wagyu Cross line has three cuts. Two 2022 articles credit the group's beef with Sterling Silver certification, which they say about 8% of the world's beef holds, and its Prime line with Prime certification, about 2%. The menu states no aging, and weights are raw. The number: 600 g / 21 oz, the rib eye weight in all three lines, at MXN 1,290, MXN 1,650 and MXN 2,995.
03The fire
The menu says the asparagus are cooked on the Josper and calls the concept a las brasas; the group's site speaks of cooking with a passion for fire. No source says whether the beef cuts go on the Josper, or names the fuel.
04The story
Sonora Grill began in 2004 as Sonora Taco Grill, on the corner of División del Norte and Eje 5 Sur in colonia Del Valle, founded by Ricardo Añorve. Excélsior counted five tables and eight collaborators; Emprendedor counted about 8 m² and six employees. By 2022 the group had about 40 restaurants in 12 Mexican cities, under the brands Sonora Grill, Sonora PRIME, Parrilla Urbana, ROOF and Holsteins, and Emprendedor dates its Prime line to 2015. Steakpedia did not find when the Reforma branch opened; 2004 is the group's date, not this house's.
