Why go
Fire first. Osvaldo Caldú called wood-fired asado a ritual: hours around the embers, people talking. In 1994 he opened El Asado Argentino on Dinamarca, at the corner of Marsella, in Colonia Juárez. The house says he wanted to share asado and wine with friends, as he did in his native Argentina, and its motto still says it: the fire is lit and the table is ready. Today there are two branches, Centro in Juárez and Sur on Insurgentes Sur, plus Bar Arrabalero, a tango venue with milongas and live music.

01What to order
- Asado asadorThe dish Caldú recommended most in a 2005 interview with Infobae. The article does not list its cuts; ask the house.
- Bife de chorizoNamed in the same interview. Caldú said the empanadas sold more than this cut.
- MatambreAlso named in 2005. The thin cut that covers the ribs.
- Morcillas and chistorrasBlood sausage and chorizo-style sausages, listed in the interview among the grilled items.
- EmpanadasAccording to Caldú, they outsold the bife de chorizo in 2005.
- Mussels, hake, salt codSeafood in the Basque style, which Caldú tied to his parents, refugees of the Spanish Civil War.
02The beef
The current website does not state the origin, breed or grade of the beef, and the menu link did not load, so Steakpedia lists none. What exists is an opinion from 2005. Caldú said Mexican cattle are slaughtered at about 24 months, too young for Argentine-style asado, and that one more year of fattening, as US producers do, builds the marbling he called the secret of good grilled beef. That is his view of the market, not a statement of what the house buys today. Prices in the same article ran from 70 to 460 pesos a dish, in 2005. The number: 24 months.
03The fire
The 2005 interview is titled for wood-fired asado. Caldú describes it as a ritual of hours around the fire and says the parrilla dates from the mid-19th century. He does not name the wood, and no source gives the grill type or the fuel at either branch. The house's own line is shorter: fire lit since 1994.
04The story
Caldú was born in Argentina and became a Mexican citizen. Infobae reports that he was jailed for four years under the Videla dictatorship and left Argentina under an amnesty; he reached Mexico in the 1980s, worked several jobs, including selling clothes in Tepito, and never went to cooking school. He began cooking at eight, for his mother. The restaurant opened in 1994. In 2005 he called it a temple and a museum of nostalgia, styled as an Argentine estancia, with ravioli machines, gaucho knives, an anvil and footballs on display and a cellar of Chilean, Mexican and Argentine wines. The house says that about fifteen years after opening he built a museum of nostalgia at El Asado Argentino del Sur. Caldú died in January 2022, after surgery.
