Why go

The breed comes first here. La Vid Argentina says its cuts are Certified Angus Beef, grilled on the parrilla, and its blog explains the label: marbling in the muscle rather than fat on the outside, and cattle between 9 and 30 months old. The blog also says every cut is analyzed by the USDA. The Insurgentes house is one of six branches the site lists, with a format built around a Tenedor Libre, an all-you-can-eat table that the blog calls much more than a buffet of cuts, and separate breakfast and dinner versions. No source says where its beef is raised.

01What to order

  • Tenedor LibreThe buffet service listed for the Insurgentes branch. The blog says it includes grilled Certified Angus Beef cuts, empanadas, pastas, a salad bar and desserts. Chilango (2009) listed pasta with sauce to choice, serrano ham, rolled matambre and soup of the day, with the meats ordered from the waiter.
  • VacíoDescribed on the blog as a narrower cut, well marbled and strong in flavor.
  • New York, T-bone, porterhouseThe loin cuts the blog names when it explains Angus.
  • Bife de chorizoNamed on the blog among the cuts from the rear of the animal.
  • Churrasco, Certified Angus Beef, 300 g / 11 ozMXN 449 on the Rappi delivery menu of the Polanco branch; the listing is undated and is not the Insurgentes menu.
  • ChoripánThe blog pairs the Argentine chorizo with bread.
  • Desayuno LibreThe breakfast buffet; Chilango priced it at $115 in 2009.

02The beef

Certified Angus Beef is the only grade the house names. The blog says the beef carries the Certified Angus Beef endorsement and that all cuts are checked by the USDA, and lists loin cuts (New York, T-bone, porterhouse) next to rear cuts (vacío, bife de chorizo). It explains that Angus originated in Scotland, became popular in the United States in the nineteenth century and later reached Argentina and Uruguay, but it does not say where La Vid buys. No source gives the feeding, the aging or the days of maturation. The Rappi menu of the Polanco branch lists arrachera and cuadril at 300 g / 11 oz beside the Angus churrasco. The number: 9 to 30 months, the age range the blog gives for certified cattle.

03The fire

The home page says the cuts are cooked on the parrilla. No source names the fuel, the grill or the time over heat. The blog on asado lists entraña, costilla, bife de chorizo, ojo de bife, picaña and lomo, and the offal molleja, chorizo, morcilla, chinchulín and riñoncitos, as the classic Argentine range, without saying which are grilled at La Vid.

04The story

No source gives a founding year or founders. In 2009 Chilango counted four branches: Condesa, Arboledas, Insurgentes and Polanco, with the buffet at $179 and a daily breakfast buffet at $115. In January 2020 the blog spoke of nine Mexican branches, while the current branch page lists six: Arboledas, Condesa, Insurgentes, Interlomas, Metepec and Polanco. The blog placed the tango show on Fridays and Saturdays at the Condesa branch. The site also sells wines labeled Finca La Vid, from MXN 449 to 1,079 a bottle.
