Why go
In 1957, according to its own website, Don Julio and Doña Carmen brought to Mexico a way of preparing fine cuts that they had discovered on a trip to Argentina. La Mansión has been a business-lunch restaurant with a family crowd on weekends since then, as Chilango wrote in 2009, with a plain menu, large rooms and cuts as the specialty. The Insurgentes branch is one of eight the site lists in Mexico City, the State of Mexico and Tuxtla Gutiérrez, and the menu separates imported cuts from national ones, which it labels Mansión Grado Supremo.

Its introduction says careful aging and selected fattened cattle give marbling and tenderness it calls unsurpassed; it states no aging days, breeds or method. The word Prime does not appear. The number: 1957.
03The fire
The grill section lists tenderloin cuts in sherry or lemon, a 250 g / 9 oz grilled filet that can come plain or with chimichurri, short ribs and a 1 kg / 2.2 lb filet arm. Embers appear in the brisket crusts, cooked slowly in ember heat, and in the names of the beets carpaccio and the chicken breast. A business registry describes the company as a specialist in fine charcoal-grilled cuts; the menu itself does not mention charcoal.
04The story
