Why go01

Hibana by Koki is for the evening when the cooking itself is the show: fourteen seats around a teppan in the basement of the Capella Hanoi, where chef Hiroshi Yamaguchi cooks each course on the iron plate in front of you. It was one of the first four restaurants in Vietnam to receive a Michelin star, in June 2023, and it kept the star at the 2026 ceremony on 4 June. The beef at its centre is Yaeyama Kyori wagyu from Ishigaki Island in Okinawa, and the World's 101 Best Steak Restaurants list for 2025 placed it, as Koki, Hanoi, at No. 54. With so few seats, this is a dinner to plan, not to walk into.

02What to order

  • The seasonal omakaseThe chef's tasting menu, which changes with the season, per Sun Group.
  • Yaeyama Kyori wagyuThe beef the Michelin Guide and the 2022 launch both named: from the Yaeyama Islands, Okinawa, cooked on the teppan at the counter.
  • Spiny lobster and abaloneAmong the ingredients the Michelin Guide listed as flown in from Japan twice a week.
  • Hokkaido hairy crab and sea urchinThe rest of that list, for a table that wants seafood alongside the beef.
  • SakeKoki opened in 2022 with a sake library of its own.

03The beef

The beef is Yaeyama Kyori, a wagyu sourced only from Ishigaki Island, Okinawa, per Sun Group, which owns the hotel; at the 2022 launch Junichi Yoshida presented it as a chance to eat top wagyu without travelling to Japan. Michelin counted it among the premium ingredients flown in twice a week. The sources give no grade, no weight and no ageing for it.

04The fire

The fire is the teppan, the flat iron griddle at the counter: Hibana means "flames" in Japanese, and every course is cooked on that plate in front of the guests.

05The story

Koki, Capella Hanoi's Japanese restaurant, opened on 21 July 2022 with Junichi Yoshida of Ishigaki Yoshida in Tokyo, the first teppanyaki restaurant to receive a Michelin star, in 2017. Its chef's table for teppanyaki was named Hibana, and Hiroshi Yamaguchi, who had worked with Yoshida at Wynn Palace in Macau, took charge of it. In June 2023 it received one of Vietnam's first four Michelin stars; it kept it in 2024 and again in 2026. In July 2023 CNN named it among the finest hotel restaurants in the world.
