Why go

Wood, and nothing else. Firedoor's kitchen in Surry Hills runs on two wood-fired ovens, three grills and a wood-burning hearth, with no gas and no electricity. Lennox Hastie opened it in April 2015 after five years at Asador Etxebarri in the Basque Country, and in 2025 he became its sole owner. Dinner is a set menu. The steak sits outside it, as an add-on: beef dry-aged for more than 200 days. The World's 101 Best Steak Restaurants placed Firedoor No. 16 in 2025 and No. 11 in 2026, second in Australia.

01What to order

  • 200+ day dry-aged beefAn add-on to the dinner menu at A$70 per person, per the restaurant's menu page on Oct. 29, 2026. Broadsheet calls it the signature dish.
  • Dinner set menuSix courses, A$240 per person on the sample menu; the sample main is Westholme wagyu with gem lettuce and caper.
  • Murray cod, paperbark, pil-pilOne of the ten dishes Broadsheet picked from the first decade: crisp skin on one side, paperbark on the other.
  • Wine pairingA$145 per person; a non-alcoholic pairing is A$115.
  • Friday or Saturday lunchA three-course set menu or à la carte; tables of seven or more take the set menu.

02The beef

The beef has changed over the years; the hanging time has only grown. In June 2015 Gourmet Traveller described a rib from O'Connor, a grass-fed Angus-Hereford cross supplied by Anthony Puharich, dry-aged 150 days and sliced to order, A$96 for half a kilo. Today the menu offers '200+ day dry aged beef' without naming the producer or the cut, and the sample dinner lists Westholme wagyu as a separate course. Broadsheet reports that the 2020 lockdowns emptied the aging stock and that it took a couple of years to rebuild. Firedoor also runs an annual series of steak nights with producers from around the country.

03The fire

No gas line. Two wood-fired ovens, three grills, a hearth. In 2015 Gourmet Traveller counted 11 woods on the back of the menu, among them pecan, grapevine shoots, orange, olive, ironbark and apple, plus hay, and grills raised and lowered on pulleys. Each wood burns differently: grapevine shoots for fast fires and small cuts, pecan for hard, hot coals, per that review. Steakpedia did not find a current list. Order the aged beef.

04The story

Firedoor opened in late April 2015 and turned ten on April 29, 2025. Hastie trained in Michelin-starred kitchens in the UK, France and Spain, then worked over the coals at Etxebarri with Victor Arguinzoniz; the restaurant says five years, Broadsheet six. He returned to Australia in 2011, joined the Fink group and opened Firedoor with it, buying out his partners in late 2024. His book Finding Fire came out in November 2017; Firedoor appeared on Netflix's Chef's Table: BBQ in 2020. The Good Food Guide made it Restaurant of the Year, with three hats, in its 2023 awards. In 2022 Hastie opened Gildas, a Basque-inspired wine bar nearby.
