Why go
Varanda Grill is run by a cattleman. Sylvio Lazzarini opened the first Varanda in Jardim Paulista in 1996. He is a cattle producer, a former president of the Associação Brasileira dos Criadores de Gado and, per Bloomberg Línea, the author of 14 books on beef cattle production. His group supplies its houses through Intermezzo Carnes, founded in 2001 and based in Mooca, which the website describes as focused on Angus and Wagyu with traceability through partnerships with producers. Lazzarini told Bloomberg Línea in January 2026 that about 75% of the meat was imported when the house opened and that imports are now zero. The same article quotes him saying the house does not rely on dry-aged beef. The website records a Michelin Guide mention in 2024 and 2025.
