Why go
For the dinner with a group that wants one large cut in the middle of the table and a room that dresses for the evening, American Cut, on Greenwich Street in Tribeca, has been serving its modern take on the New York steakhouse since 2013, by its own account. It belongs to LDV Hospitality. Time Out's 2013 review credited "Iron Chef" Marc Forgione and described an Art Deco room with marble floors, brass chandeliers and rosewood tables; today the team page names Juan-Pablo Perez as executive chef. The steak list gives the aging days for most cuts, from 28 to 30, and the house asks guests to dress with intention. It was No. 75 in the World's 101 Best Steak Restaurants 2025 and No. 67 in 2026.

02The beef
The menu groups the beef by cut and states the aging for most of it. Dry-aged 28 days: the 14 oz NY strip, the 20 oz bone-in rib eye and the 40 oz porterhouse. Dry-aged 30 days: the 40 oz tomahawk chop. The 20 oz pastrami ribeye is marked dry-aged without a number. Listed without aging: a 10 oz filet mignon at US$77 and a 12 oz American Wagyu strip at US$109. At the top, Japanese A5 Wagyu from Miyazaki is sold by the ounce, at US$39. The menu does not give the USDA grade, the breed or the ranch for the other cuts.
03The fire
No source states how the kitchen cooks the steaks. The house names one flourish: the 40 oz tomahawk chop is finished as a flambé.
04The story
American Cut opened in Tribeca in 2013, at 363 Greenwich Street, between Franklin and Harrison. Time Out's December 2013 review called it a spin-off of Marc Forgione's Atlantic City original and listed the pastrami-spiced rib eye at US$44 and the tomahawk for two at US$135. LDV Hospitality, whose founder and president is John Meadow, runs it today, along with a second American Cut in Washington, DC. In 2025 and 2026 it appeared on the World's 101 Best Steak Restaurants list, at No. 75 and then No. 67.
