Why go
Wood. Food & Pleasure in 2023 and Gastrolab in 2025 both say Sylvestre cooks its cuts slowly over wood from different trees. A different meat is roasted every day. The house opened in 2015 in the former Casa Calderón, on Anatole France in Polanco. Forbes México described a mansion of more than 100 years, with two floors and a terrace over a garden. The restaurant calls itself an Asador Mexicano: Argentine grill, Mexican dishes. Cuts run from entraña and bife de chorizo to T-bone and cowboy, with Kobe and wagyu in small portions.

04The story
The restaurant's website dates Sylvestre Polanco to 2015, in the former Casa Calderón at Anatole France 74, and says the name comes from the street, named for the author of the novel El crimen de Sylvestre Bonnard. Forbes México (August 2015) credited the space to Santiago Cuaik's studio with Javier Sordo Madaleno de Haro: an old mango-wood bar and a smoking library below, a terrace above. Hotbook counted three branches in 2019, with Interlomas next. Today the site lists five: Artz Pedregal, Polanco, Santa Fe and Interlomas, plus Midtown in Guadalajara. It belongs to Grupo Hunan.
