Why go

Fire runs this house. El Cronista describes an open kitchen with a wood oven, a parrilla and a bar for six; Time Out says the embers reach the kitchen, the dining room and the garden. The building is a casa chorizo from the early 1900s. The old gallery now holds the grill. The old bedrooms hold the tables. Asadero belongs to Grupo Mezcla, the group behind Casa Cavia and Orno, and opened here in mid-2026 after a first run in Olivos. Beef shares the fire with fish, lamb, rabbit and vegetables. The menu changes with the seasons.

02The beef

Big animals. Time Out gives more than 550 kg / 1,213 lb, raised mainly on pasture and finished on a mixed diet that includes grain. The entraña on the menu is novillo, a steer. No source names the estancia, the breed or any aging. The chef, Rastellino, wrote La carneada, a book on raising and slaughtering a pig and making its charcuterie, per Infogastronómica.

03The fire

Wood oven, parrilla, chapa. El Cronista names the oven and the grill; Infogastronómica adds the chapa, the flat iron plate that finishes the tongue. The fire zone sits in the old gallery, open to the room. In the garden a fogonero burns beside a mirror pool. No source names the wood. Trout from Río Negro, rabbit, fennel and sweet potato take the same heat. Order the entraña rare.

04The story

Grupo Mezcla, led by Guadalupe García Mosqueda, first ran Asadero in Olivos, in the northern suburbs; the group told Clarín the site did not suit the project. It reopened at Fitz Roy 1041 in June 2026. Chef Juan Pedro Rastellino has cooked for more than twenty years, including at L'Aubergade in southern France, which Infogastronómica describes as a three-star house. The wine list is by Delvis Huck, head sommelier of Casa Cavia and Tim Atkin's Sommelier of the Year 2025, with labels from Argentina, France and Italy. Part of the produce comes from the group's kitchen garden in Saavedra.
