Why go
For dinner before a game at the Gabba, or the family dinner where most of the table wants steak and someone wants pizza, Fiasco's is the dining room of the Morrison Hotel, a brick pub on Stanley Street built in 1927. The steak list is short and plain: eight cuts, a dry-aged option and a premium steak the chef changes regularly, per the hotel. The kitchen keeps its recipes on purpose, and the mushroom sauce and the twice-baked potato come from the cooks of Fireworks Steakhouse, which opened on this site in 2003. Beside the steaks there are wood-fired pizzas, pasta, salads, a fish of the day and vegetarian and vegan dishes, so everyone at the table can order.

01What to order
- Rib on the bone, 400 g / 14 ozThe most popular steak, per Time Out in July 2026: spice-rubbed, with a twice-baked potato or chips, a sauce and greens. In 2022 Time Out gave its origin as the Darling Downs.
- Mushroom sauceCreated by Zac, the hotel's main grill chef for 15 years; the hotel says the recipe has not changed.
- Twice-baked house potatoOne of the sides that began at Fireworks Steakhouse in 2003.
- The dry-aged steakThe hotel lists a dry-aged option and First Table names a dry-aged rib on the bone; no source gives the days.
- Wagyu rump, grade 6Listed by First Table among the eight cuts.
- 60 Second CalamariA starter for the table, created by Mr. Thu, who cooked at the hotel for 25 years, with a blueberry dipping sauce.
02The beef
The hotel names eight cuts but not the farms behind them. First Table describes the beef as Australian and lists a grade-6 Wagyu rump and a dry-aged rib on the bone. In 2022 Time Out placed the rib on the bone in the Darling Downs, when ten steaks ran from A$36 to A$56; in July 2026 it counted ten steaks from A$34.
03The fire
The hotel describes a wood-fired oven for its pizzas. No source names the fuel or the type of grill used for the steaks.
04The story
The name came before the steakhouse. In 1992 Fiasco's Restaurant & Bar was an Italian pizza and pasta restaurant with two locations, one of them subleased at the back of the Morrison Hotel; that room is now split into the Piano Lounge and the Original Fiasco's Room. MGW bought the hotel in 2002 and in 2003 opened Fireworks Steakhouse, an open-air restaurant where the main dining room stands today. A few years later the two were combined as Fiasco's Steakhouse. Two cooks shaped the menu that remains: Mr. Thu, at the hotel for 25 years, created the 60 Second Calamari and the Saigon dressing on the garden salads, and Zac created the sauces; both have retired. The building dates from 1927, when Mary Elizabeth Henderson bought the corner site, and Brisbane City Council has listed it as a local heritage place since 2000.
