100 Century Avenue Steakhouse is on level 91 of the Shanghai World Financial Center, inside the Park Hyatt Shanghai in Lujiazui, Pudong. The floor is run as several restaurants with show kitchens; Forbes Travel Guide places the steakhouse on the west side and the Cantonese restaurant on the east, and calls its cooking traditional steakhouse fare. Hyatt describes a grill menu of prime beef, market seafood and premium poultry.

The verified beef facts are few. Pearl names two signature items, a dry-aged Wagyu ribeye and a tomahawk, and says only the ribeye is dry-aged, without a number of days. The hotel's à la carte menu PDF could not be opened, so breed, origin, marble score and price are not stated here.

03The fire

The En Primeur Club listing mentions the theatrics of an open grill but names no equipment or fuel. In a review published on June 3, 2009, The Globe and Mail described the floor as a series of show kitchens, with four wood-burning ovens for the Western cooks and a meat locker where guests choose their cut; whether that setup survives today is not confirmed.

A Hyatt release of February 2008 said the Park Hyatt Shanghai would open that September. The Globe and Mail's 2009 review is the earliest account of the 91st-floor restaurant Steakpedia found; the date the steakhouse itself opened was not found.
